Ingredients

dough:
vegetable oil 2 tbsp. l.
ayran or kefir 400 ml
salt 2 tsp
soda 1/2 tsp
chicken egg 1 PC
filling:
Adyghe cheese or any pickled cheese 400 g
I used 200 g of manuri cheese and 200 g of feta
beet tops net weight 400 g
butter (melt) 100 g
flour 750 + (100 for forming) 850 g

Cooking method

  • I believe that now is not the season for beet tops, but living in Greece, it would seem, I do not feel the need for such, I try to have a supply, just freezing it already prepared. You can bake pies using frozen spinach, it still tastes good!
  • Dough:
  • Knead the dough from these ingredients and put it in a warm place for 30-40 minutes. I heat up the microwave and put a bowl of dough in it.

  • Rinse the tops thoroughly under running water, dry and remove thickenings and streaks, cut into thin ribbons.
  • Grate cheese on a coarse grater.

They weren't baked with anything.I was born, grew up and lived up to 28 years in Ossetia (and what an Ossetian daughter-in-law is, only "fellow soldiers" will understand), I bake Ossetian pies even under anesthesia. They are only yeast and only in the oven, there can be no "ts'akharajin" in the pan, even if the filling is similar! This is, for sure, a very tasty dish, but not the Ossetian tsaharajyn! National cuisine, it is like that, does not tolerate interpretation. Despite the fact that the Caucasus seems to be one big clearing, customs, traditions and cuisine are different for everyone. If I decided to fry Ossetian pies in a frying pan, my mother-in-law would kick me out of the house. And please, do not be offended, the main thing is that it is delicious, but what is it called there - the tenth thing!
PS: and by the way, the Ossetian pie, any, is "going" in a different way.

Thanks for the recipe! Took to bookmarks. And I've already tried it. Only with other fillings: one - mashed potatoes with cheese, the other - a pack of regular cottage cheese, plus herbs (dill, parsley, cilantro), plus cheese. She took the usual hard (marble) cheese, and fried it in the oven. I got a dry dough in the oven, probably because I have it weak. But I love crackers, so it's delicious for me!
