Cooking method

  • First, sterilize dishes that will come into contact with milk and sourdough. I have a 0.5 liter jar, a metal lid and a tablespoon.
  • Place a rug on the bottom of the bowl. Put the jar on top. Pour milk and kefir into the jar. Mix. Cover the jar with a lid (not tightly). Pour lukewarm water (temperature approx. 36 ° C) into the bowl up to the shoulders of the jar. In my case, this is 2 liters of water.

  • Mode "Yogurt-2 (sour cream)"... After 1.5 hours, the water temperature at the bottom of the can was 36.1 ° C... The temperature was the same after 2.5 hours.
  • After 2.5 hours from the start of the operation, the kefir was fermented. At first it seemed to me that there was a detachment of the serum, but it turned out that this is just a visual illusion

  • I sent kefir overnight to the refrigerator for ripening (you can skip this stage to make curd, I needed it to check the "Yogurt-2 (sour cream)" mode, that is, to look at the state of kefir after ripening).

  • Place the jar in the bowl on the rug again. Only this time our ready-made kefir is in the bank. Pour warm water into the bowl again.
  • Since the "Yogurt-3 (cottage cheese)" mode lasts a certain amount of time (for making cottage cheese from milk and sourdough), it is not suitable for us for making cottage cheese from ready-made kefir. Therefore, we choose the mode "Manual"... 2 stages, repeating the second and third stages of the "Yogurt-3 (cottage cheese)" mode: 1.30 minutes 60 ° C; 2.30 minutes 70 ° C... During the operation of the mode, I took measurements of the water temperature. At the end of the first stage, the temperature was 50 ° C, in the middle of the second stage 57.2 ° C, 5 minutes before the end of the mode 60.5 ° C.

  • We put the curd on cheesecloth. Drain the whey (literally 5 minutes).

  • Add cottage cheese, add greens (I have dill). Mix thoroughly.

  • Squeeze the whey lightly. You can stop at this stage. But you can also give the curd a shape. To do this, we place the curd in gauze under oppression for 15-20 minutes (less is possible, the main thing is not more so that the curd does not become dry). And then we turn it over on a plate

Note

I did not measure the weight of the finished curd, but its dimensions are approx. 8 cm in diameter and approx. 2 cm high. The consistency is soft.
It looks like Philadelphia cheese, but it is still a curd, since no boiling takes place.
