Ingredients

Wheat flour 1 kg.
Eggs 10 pieces.
Lard (overheated) 150 gr.
Sugar 150 gr.
Lemon zest with 2 pieces.
Vanilla taste.
Baking powder 1/2 tsp
Glaze
Honey 300 gr.
Sugar 300 gr.
Margarine (I have butter) 70 gr.
Almond 200 gr.
Zest with 1 lemon.
Sugar topping taste.
Vegetable oil 1 bottle.

Cooking method

  • Pignolata is a dessert common in Sicily. Traditional pastries from two Italian cities located on the Strait of Messina - Messina and Reggio Calabria. It was usually cooked during the carnival period, but today it is found in Sicilian pastry shops all year round and is the most popular cake in the area. Pignolata is often prepared for Christmas.
  • Pignolata are small pieces of deep-fried dough that are stacked in a slide. Then one half is covered with melted chocolate, and the other with powdered sugar, lemon syrup or caramelized sugar with added flavors and aromas.
  • Originally there was honey penolata. For her, they took pieces of dough in the form of deep-fried pine cones and covered them with honey (this option is still common in some mountainous regions of both provinces).
  • Glazed pignolata appeared during the period of Spanish rule, when the previous “poor man's” recipe was revised by order of noble families. They began to cover the cake with sweet lemon icing and melted chocolate.
  • Sift flour. Add eggs, lard, sugar, zest, vanilla and baking powder. Mix everything.
  • Pignolata (la pignoccata (pignulata in siciliano) di nonna Giovanna) Pignolata (la pignoccata (pignulata in siciliano) di nonna Giovanna)
  • Roll out the dough into a sausage and cut into small pieces. Heat vegetable oil in a high saucepan and cook dough balls in it.

  • When they acquire a golden hue, remove them with a slotted spoon and dry them slightly on a paper towel. I added oil to the saucepan as needed. I spent a glass and a half. Fried the dough in oil in small batches in 3-4 doses, for 5-8 minutes. I didn't watch the time especially. Prepared a third of the norm specified in the recipe.
  • In a saucepan, melt the honey with sugar, butter and lemon zest.

  • Add balls and almonds.

  • Mix everything, put it on a plate and decorate. I also dripped lemon juice into the glaze from myself, the citrus smell was very strong.

  • I covered the other part of the pignolata with chocolate and powdered sugar.

Very nice cake! And what does it taste like?
For glazed cookies. And it is better to make it thinner and smaller. Well, for my taste. In honey glaze it is softer, apparently due to butter and honey, and the smell is pleasant, lemon. With powder drier. I didn’t make any icing, as I cooked it again at night, although I was going to try it too.

Larisochka, great! As if it was symbolic: at night I covered the cookies with dark glaze, and in the morning with white! That's how I cook at night !!! Holiday greetings!!!

Thanks for the recipe and idea, a child (11 years old) was looking for an affordable dessert for Christmas for dad to make as a gift; it turned out deliciously, dad barely stopped; we added syrup impregnation with cognac (in a bowl in syrup we moistened the balls) and put fried sesame seeds in the honey glaze, poured melted milk "Milka" on top, the chocolate gave such a flavor !!! Thank you! Merry Christmas !!!

By the way, my daughter also made a third of the norm of food, a good cake turns out, who loves more boldly take half the norm, it will not be enough!
