Calculate the time correctly when using a timer. Once I dulled and set the timer for the night so that the bread was baked at 3 am (I set not the start time, but the time the bread was ready). You can imagine what I saw at 8 am. Even the bucket had time to cool down. This did not affect the taste of the bread, but all the condensed moisture absorbed into the crust and it became "rubbery".
