Tools and accessories required for baking homemade bread.

In order to correctly measure the products (ingredients) for kneading dough and baking homemade bread in a bread machine, we need the following tools and accessories. Some of them are included with the bread maker (measuring cup, measuring spoon, kneading knife), others need to be purchased by yourself, since they give accuracy in measurements and are simply necessary in working with the dough.

Now the materiel.
The mortar itself is made of a solid stone with a cutting applied inside. (There are also very large ones, but here you need to be careful: they are often made of pressed stone mass. Do not eat gud.)

There are wooden, metal - I do not advise. So, a pathetic excuse for a left hand ... Sorry

Ceramic - good value for money. You just need to pay attention to deep enough cutting inside, otherwise it is quickly erased, polished and loses its properties to grind ...

Price: mine made of stone costs 700 rubles.
Like Julia Vysotskaya (who has seen) in "Let's Eat at Home" - 360 euros + the same amount - delivery to Russia. But also the quality, really ...

For sale: for example, in small crockery shops of German kitchen utensils in hypermarkets like "Auchan". If you do not pay attention to a specialist, you will pass by ... The colors are very different. I also have malachite (colors) and white (die - don't get up!).

In such mortars, it is very convenient to grind coarse salt into powder in a couple of seconds, a small amount of sugar into powder. Spices - any. For example, a vanilla pod. Spice mix. Pepper. Grind nuts to add to bread. Or seeds. \
Fast. There is no need to collect or disassemble anything. Rinse - a second. Good thing. Only very heavy.
Want to buy
As it turned out, in order to conveniently tinker with the bread maker, additional tools and devices are required.
In the first place are the scales, and in the second - everyone has their own.

But the tools make life and work easier. Therefore, I propose to create a column in which you can write about your choice of something, which greatly simplified life or find out someone else's advice.

What prompted me to write was that I don't like sifting flour through a sieve. I do not have a large sieve (it takes up a lot of space), but through a small sieve it takes a long time.

Yesterday in the store I bought a stainless mug with a lever, you pull the lever, and in the mug itself, the blades through a sieve (instead of the bottom) are pushed down the flour and pushed.
At idle and in the store, everything looked tempting, but when I loaded 250g of wheat flour, I swore, moved very hard, my hand was tired and VERY slowly.
When I loaded 125 grams of peeled rye flour, I swore VERY hard. Didn't go at all.
I'm going to return and demand money in the ass.

That is why I want to know who uses what, in order to simplify my life and not buy something that will upset a novice baker.
Elena Bo
I have been using such a mug for several years (I bought it in Ikea). I fall asleep at once a full mug (300gr.). It is sifted quite easily (premium wheat flour) and quickly. And then I try to slow down, because from the quick sifting the flour begins to dust.
I want to buy, maybe you just aren't used to it? The arm muscles are not used to it.
Lola
I found a place where I am pleased to show off my mortar. The right thing in the kitchen!

You can buy mortars in Moscow at:
- "euro house" (it seems like that) - a shop at the exit from Auchan (located opposite the ticket office) By the way, there are now discounts on them.
- at the Izmailovo opening day. True, there are only iron ones.
- "red cube" - there used to be little steps in the shop, but now no - they say they will.

Since this is the case, it is very practical to grease the bread with protein or milk immediately before baking after proofing with such a silicone brush Baking tools and accessories

Large funnel plastic, small metal. I indicated the dimensions - you can draw.

I bought plastic for a long time, you can buy it in any household. store in Moscow in the plastic department. products. Metal. I bought a funnel not so long ago in a magician. A million little things on the Bibirevo metro station in the expensive metal department. dishes on the 1st floor. Yes, they are found everywhere, you just have to look closely or ask the sellers. The thing is, of course, very necessary.

I have 2 such wonderful rugs: for each baking sheet. I use them all the time. No need to wash baking sheets. If caramel flows out, which is formed when baking products with sugar sprinkles or sweet filling, it is simply removed with a film after cooling. Oil is easily washed off. Nothing sticks. And in general, for baking in the oven, I now only use silicone molds.

What I am missing is a cooking brush. I don’t find silicone in Ukraine ...
Who lubricates bread with what, inject, people!
Why exactly a silicone brush? I use the usual one for the test and for the forms. It has a plastic handle and a decent synthetic brush (nylon bristles). Easy to clean, nothing will fall apart or stick together. There are plenty of them in the crockery departments of supermarkets. Called a "culinary brush":

In4ik, too lazy to go and take pictures of my mug, I will show it taken from the Internet, because I have exactly the same:

You pour (scoop) flour into it, then, pressing the lever on the handle (it can be clearly seen in the photo) with your fingers, you set in motion a three-blade mechanism on a spring, which is at the bottom of the mug (it is also visible), which, in turn, " passes the flour through a sieve into the required container. Clear?

This is a mechanical mug, and there are also automated options. We have already written about them here.

Silicone. I bought it in Riga in Stockman, I don't know if there is such a store in Moscow, it probably should be

I have a question for the owners of sieve mugs: could you post a photo? we do not have Ikea, but what a miracle mug I am very interested in!

And there is a chain of Stokmann stores in Moscow, and such silicone spatulas are sold in almost any household.
And for example, my sieve mugs are like that. I like that it has a lid on the bottom so that flour does not wake up while you pour it there or if you need to interrupt.

There is also such a sieve-metal mug, as in the previous message.
And there is a battery-powered vibration, from De Kok

Well, it's simple. I poured a full teaspoon of my HP into the syringe and measured. It turned out 4.2 ml. Although, if the recipe needed EXACTLY one teaspoon, I would certainly not bother with this thing. The problem was that there were too many teaspoons for my recipe, and it is not so easy to measure fractional parts by eye (this is not to pour vodka)

Oil dispenser
Everyone who baked bread in bread makers, on the one hand, appreciated the deliciousness of fresh and high-quality bread and, on the other hand, came across the need for a scrupulous attitude to ingredients and recipes. The creation of a certain "infrastructure" around the baking process is simply necessary to significantly reduce the time and effort required. Under such infrastructure, in addition to the bread machine itself, we mean tanks for storing bulk and liquid ingredients, as well as dispensers. The latter relieve the baker from having to weigh the substances according to the recipe every time. I solved the storage problem for the main ingredients (sugar, salt, milk powder, yeast) except for flour (a separate topic) with the help of glass jars for twists of different sizes with metal lids (photo 1) - a budget option, since special packaging is simply more expensive, but not much better. Why is it advisable to store products for the bread maker in a separate container, because they are already available anywhere in the kitchen? In the case when bread is baked occasionally, there is no rationale. But when every day - it makes sense to collect all the ingredients in a special box near the bread machine, thus saving time on collecting the baking mixture. To dispense bulk and liquid substances (I do not open America), plastic measuring cups and standard (from a bread machine) measuring spoons for small portions (sugar, salt, yeast) are used - photo 2.
The only problem is measuring the vegetable oil. It is very often present in the recipe, but it is inconvenient to measure it with a regular measuring spoon, since it is used for dry ingredients. As a way out - take a regular tablespoon every time. Cons - it is difficult to measure accurately, you have to measure twice (two tablespoons for a large loaf) and you also need to wash a spoon every time.
My know-how is to combine packaging and dispenser (photo 3). Packing is the same glass jar, and the dispenser is a plastic cup with a division by the number of spoons (photo 4). The tsimus is that the glass is sized so that it fits into the jar, but does not completely fail, but lies with its side on the edges of the neck (photo 5). This allows the dispenser to be stored inside the can with the lid closed. If necessary, the jar is opened, the dispenser is removed from it, the required portion is measured, poured into the mold, the dispenser hides back into the jar, the jar is closed. Pros - always at hand, no need to wash, the right portion is measured at a time. If there is a lot of oil in the jar, then after measuring, before hiding the dispenser, part of the oil is poured into it so that the empty glass does not support the lid.
This method has been tested and confirmed the hopes placed on it.
Next issue - flour storage and dispenser.

Please help with advice from experienced craftsmen. Already the second rectangular shape in the oven deforms when heated. I use them for pizza or cookies, the first one with a non-stick coating began to behave like this after about a year of use, and the second one, made of stainless steel, with a corrugated bottom, "got out" from the very first use. The forms are not Chinese. Is there a "cure" for their deformation?

I replaced a simple grater with two tools: TONG and an electric shredder Moulinex fresh express plus.
TONG (Those Who / What You Can't Talk About) is a TNS-3000 grater, compliments about her work are not welcome here, judging by the recent kipish in the profile topic. )))

I have a trapezoid scraper and a glass board.
I use them to cut the dough into pieces. Why inside a non-stick mold?
If it burns?
I grease the mold with oil, even a silicone one. Non-stick for confidence
I cover it with paper.

Tool for planting bread on a stone

I do not know what topic to write, I ask for help. Can someone tell me where this message is on the forum? One of the few men on our forum showed how he made a device for planting bread on a stone.
