Wheat-rye bread with dark beer

Ingredients

wheat flour (a / c or 1c) 2 cups
Rye flour 1.5 cups
dark beer 1 cup
warm water 0.5 cups
olive oil 2 tbsp. spoons
salt 1 tsp
brown sugar (or honey) 1 tbsp. the spoon
dry yeast 3/4 teaspoon

Cooking method

  • Put all the ingredients in the bread maker according to the instructions, sometimes I also add 1 teaspoon of ground coriander.
  • Program - "Dough". After the end of the program, knead the dough, divide into 2 parts, form 2 loaves (or 4 small round rolls).
  • Leave for proofing in a warm oven for 30 minutes.
  • Bake at 200 degrees for 30-40 minutes. For the first 20 minutes I put a bowl of water on the bottom of the oven.

The recipe was found on the Internet at the dawn of purchasing a bread machine. Then I had not yet thought of copying and links to the original source, today I honestly searched, but could not find. Thanks to the author for the simplicity and deliciousness. I changed the recipe a little for myself, but I don’t remember what exactly I changed. We don’t seem to have this on our website (I looked for it)

The dough is sticky, flour must be used when molding.
I change coriander to caraway, or without them at all. You can add different seeds (sunflower, linseed, sesame, etc.), sprinkle with anything, that is, use it as a basic recipe for different types of bread.

rye flour 178 g
dark beer 230 ml / 220 g
warm water 110 ml / 108 g
olive oil 22 g
salt 6 g
brown sugar 13 g
dry yeast 2 g

HP's cups are standard, and the weight will depend on the moisture content of the flour. I always follow the bun and add flour / water. the dough should be slightly smeared along the bottom of the bucket. I'll weigh my flour a little later
