We tried various recipes (except for sourdough recipes) and programs with observance of the weight and sequence of ingredients, the bread did not look good.
My opinion is subjective, because there is not much experience, so I think it will be interesting to discuss this model and the results of its work

Sergei, reduce the amount of yeast. If it does not help, then reduce the water, for a start by 1 tbsp. spoon. Should help. It's just that recipes from other stoves (usually given in glasses) may not fit, they need to be adapted. Each bread maker has its own measuring cup and it may not be the same size as yours. Hence the problems.

I would like to draw your attention to the fact that although the Rye regime is there, it is not entirely complete. That is, it is similar in time, but it does not have a special knife (as I understood, there should be a special knife with a hole inside for the Rye mode). And when he kneads heavy dough, it dances a little. It can dance about 30 degrees. If I put on the timer (for the morning) I remove everything that is beating half a meter around the bread machine. There is no automatic dispenser yet, due to this it is smaller. Well, nafig this automatic dispenser.

In general, I won't change it for another.

Note. You can use premium white flour instead of French flour.
French bread must be baked in program 7 or 2 (mod. BM210), which allow for a longer rise and bake, but at a lower temperature. The bread is crispy and airy inside.
Spicy bread with seeds
Ingredients (1000 g):
warm water - 300 ml (part of the water can be replaced with an egg); wheat flour - 400 g; rye flour - 50 g; powdered milk - 5 tsp; salt - 1.5 tsp; sugar - 1 tbsp. l .;
olive oil - 3 tsp; dry yeast - 1.5 tsp; paprika - 2 tbsp. l .;
dill - 1 tsp; A
pumpkin seeds - 1 tbsp. l.

Sweet bread

Italian pizza
Ingredients:
water - 250 ml;
olive oil - 1 tbsp l .;
unbleached flour for white bread - 450 g;
salt - 1 tsp; sugar - 1 tsp;
dry yeast - 1 tsp.
For the filling: tomato paste - 8 tbsp. l .;
dried oregano - 2 tsp;
mozzarella cheese,
cut into small pieces - 280 g;
fresh cream tomatoes, cut into large pieces - 8 pcs.;
yellow pepper, peeled and cut into thin strips - 1 pc .;
green pepper, peeled and cut into thin strips - 1 pc .;
sliced ​​mushrooms - 100 g;
delicate cheese, cut into small pieces - 100 g;
ham "Parma", cut into pieces - 100 g;
grated parmesan cheese - 50 g;
fresh basil leaves - 12 pcs.;

Variation
Instead of an apricot for this jam, you can use plums.

Dough
You need to put all the ingredients (water, flour, salt, sugar, yeast) into the container and turn on program 8 (mod. BM 210), 11 (mod. BM300) or 9 (mod. BM200 / 258). The bread maker will knead the dough and raise it at the correct temperature. You can use the dough right away or put it in the freezer until next time you use it. And the friends who gave it to me, I don't remember which brand, but with 2 dough mixers, and now they are perverted with it - the dough is formed unevenly, the loaf comes out lopsided (if it is not forced to level it). And I put mine on at night and don't interfere with the process. So, I'm quite happy with my stove.

I put a loaf on 700g according to the basic recipe for yeast 1 with a quarter of a tsp, a little more salt than according to the recipe and pour milk directly from the refrigerator, it turns out wonderful. (I don't put dry milk, but instead of 70-80ml of water I pour fresh milk, respectively)

In principle, there were no particular failures. There were 2 curiosities for an inexperienced internet-free baker.
1- my 1 nighttime bread on the timer. In the instructions for the stove, it is not written anywhere that yeast, salt, sugar must be poured in different corners, so that the yeast does not get wet .. I had nothing to do with yeast before, well, I sprinkled everything together. It's a pity I didn't think to photograph the bread - it was so low, and around the entire perimeter there was such a rather high, even side (3-4cm approximately), with a little finger thick. Well, she laughed, consulted with friends, they just bought the stove, they studied all their instructions (a large one, color) and now everything is fine.
2- my first rye bread according to the instruction (which was not there). According to the recipe for whole grain, instead of whole grain, I poured rye flour. Well, here even the bun didn’t mess up, it’s a brick. And with the recipe, something completely different, you can try.
I bake almost several recipes, buy the simplest flour 165r / 10kg (and then here on the Nordic forum, improved Nastya ...). I noticed that she takes a little less liquid, made an amendment and somehow I no longer bother. Well, I can’t treat the way some people write: 214gr. something, 67gr. I don’t even have electronic scales ... I’m such a consumer. Well, if you create something new, then of course you need to follow ...

If the bun is normal, try to reduce the amount of yeast by 1/4 tsp and see what happens, apparently the bread is very suitable during the rise, for example, for me, each type of yeast requires its own tab (Pacmaya raises the most).
