Ingredients

Rye sourdough 100% moisture 160 grams
3 cereal flakes 20 grams
Flax, pumpkin, sunflower seeds 45 grams
Fine sea salt 7 grams
Water 60-70 degrees 85 grams
Wheat flour 1 grade 75 gram
Whole grain wheat flour 70 grams
Peeled rye flour 30 grams
Raw grated carrots 55 gram
dry yeast 1.5 grams
odorless sunflower oil 5 grams
Water 10-20 grams

Cooking method

  • Leaven:
  • 80 g rye flour
  • 80 g water
  • 20 g rye starter
  • Mix everything well, cover and leave to mature for 16-18 hours at room temperature.
  • Lobe:
  • 20 g cereal
  • 15 g pumpkin seeds
  • 15 g flax seeds
  • 15 g sunflower seeds
  • 7 g salt
  • 85 g water, 60-70 ° C
  • Mix all the ingredients well, cover and let sit for at least 3 hours.
  • Dough:
  • Sourdough 160 g.
  • Lobe, whole
  • 70 g whole wheat flour
  • 75 g wheat flour
  • 30 g rye flour
  • 55 g grated carrots
  • 1.5 g yeast
  • 5 g plant oils
  • 30 ~ 40g water
  • Combine all ingredients with a food processor or by hand.
  • I started with a hook. but then I switched to manual kneading.
  • The dough must be firm for it to hold its shape.
  • Therefore, select the amount of water for your flour.
  • Leave for 30 minutes, covered with cellophane or a cap.
  • Can be put away in a bowl with a lid.
  • Crumple, shape, moisten with water, sprinkle with flakes and press down.
  • Proof.
  • My proofing took place on baking paper and took 1.5 hours.
  • 10 minutes before planting in the oven, make one cut.
  • Bake in the oven at 250 degrees for the first 5 minutes with steam, and then remove the steam, ventilate the oven, lower the temperature to 190-200 degrees and bake until tender so that the bread is well fried.
  • I did it in 35 minutes.
  • Cool on a wire rack.
