Wheat bran bread with oatmeal and maple syrup

Ingredients

Unsifted
(wholegrain)
wheat flour
75 g (3/4 cup)
Wheat flour 375 g (3 1/4 cups)
Bran (I threw wheat) 2 tbsp. l.
Water 315 ml (1 1/3 cups)
Salt 1 tsp
Sugar 1 tsp
Olive oil 2 tbsp. l.
Dry yeast 2 tsp
Oatmeal 40 g (1/2 cup)
Maple syrup 2 tbsp. l.
Glaze:
Protein
+ 1 tbsp. l. water,
sprinkle with oat flakes on top

Cooking method

  • Recipe from the kuking website. Net ( 🔗 Herculean bread with maple syrup) with a slight adjustment: replaced the butter with the same amount of olive oil, 1 tsp. Yeast for this amount of flour seemed to me not enough, I threw 2. I thought about it and added more. A little bit.
  • Result: the dome sagged slightly, BUT the crumb was airy and soft, the taste of yeast was not felt, the flakes “dissolved”. So far, the most successful bread with bran and whole grain flour. Next time I'll throw 2 tsp. yeast. And I also wanted to sprinkle it with oat flakes.
  • So, I baked a medium loaf (I measured the products in cups)
  • Pour in and fill in the ingredients according to the instructions for your oven. "Basic" mode, medium crust. In 5 min. before baking, grease with glaze and sprinkle with flakes.

Olya, I put some bread according to your recipe. It’s immediately clear that there’s not enough water: I had to add 50 milliliters. Otherwise, it didn’t mix at all. Maybe we have different glasses? I added water, and the dough immediately rolled into our classic bakery bun. I will report it to you.

In short, 315 ml is not enough. In the process of mixing, I topped up almost 90 ml of water. And only then was it mixed. But something awesome was baked! Smell!.....

Luca, glad you liked it. We are also going with a bang! On Saturday I baked it after lunch, yesterday we already finished it.

I also add water. I just decided that the first time I measured the water poorly (my cup is divided into 8 divisions), and the flour is different here. On Saturday to 315 ml.I had to add 2 more tbsp. l. (only 345 ml.). The pulp was even more airy. A dream come true!

In terms of syrup, I really like to season it with fruit salad (apple, banana, orange, tangerine, grapes and raisins or dried cranberries).

Zoichik, I always measure with an ordinary American measuring cup (cup) - they have almost all the recipes in cups, the scales are not needed yet. Moreover, almost all bread recipes are from here.

Just now I saw a photo ... We have different flour. Therefore, apparently, my dome is sagging (it does NOT affect the quality of the bread). This means that in the recipe you just need to add "in the process of mixing, add the required amount of water, one tablespoon each" - two are enough for me, but you had to add 6!

And for the recipe - always welcome! Considering that bread with bran and oats is FOR HEALTH!
