Moroccan chickpea in a multicooker-pressure cooker Steba DD1

Ingredients

chickpea 450gr
water 5 mstk
tomato paste 4st. l.
pumpkin 200gr
onion 2 pcs.
garlic 1 head
mandarin 2 pcs.
zira 1 tsp
black pepper 1 tsp
chilli 1 tsp
Bell pepper 2 pcs.
salt, seasonings
olive oil 2 tbsp. l.
Mint 3 tbsp. l.
coriander 1 tbsp. l.
sugar 1 tbsp. l.

Cooking method

  • Soak the chickpeas in water for 5-6 hours (more is possible). During this time, change the water 2-3 times (to reduce flatulence). Drain the water, rinse the chickpeas, put in a steel bowl, fill the chickpeas with water to the top (do not salt!). Mode \ "Porridge \" 0.7 20 min. In general, after that the chickpeas are ready (if needed, for example, in a salad and just as a side dish). But if you do it in Moroccan, then you need to add more vegetables and a lot of spices. Three pumpkin on a grater, cut everything else, crush the peppers, coriander and garlic in a mortar, fresh mint is better (it grows on my windowsill), but you can also dry it. Rub Zira with your fingers. First, remove the zest from the tangerines with a grater, then peel and cut the slices, add the zest and pulp together with tomato paste, sugar and olive oil to the chopped vegetables. Salt to taste.
  • Drain the excess water from the chickpeas and rinse again. Add the prepared mixture of seasoning vegetables. Stir, "vegetables" mode 0.7 for 10 minutes. Everything is delicious, simple, fragrant.

Time for preparing:

20 + 10 minutes

Linadoc, very interesting! Really 20 minutes is enough, I can't even believe it. thanks for the idea
Linadoc
I myself was surprised that recipes for chickpeas in a pressure cooker went off scale in 1 hour, I even saw 2.5 hours. I didn’t believe it and checked it. You don't even need to soak for 10-12 hours, actually 5 hours was enough. After 20 minutes I tried Kashi 0.7 (that is, high pressure) - absolutely ready, but not overcooked - great! And then an additive for taste, the locals taught me that.

Yes, Chickpeas are cooked for more than 1 hour, but only if NOT SOAKED! And the soaked enough to check and 20 + 10 minutes!

The recipe is very attractive

I can't imagine the taste of chickpeas with tangerines. Sooooo interesting!
fronya40
Thanks for the recipe and for clarifying the time :-) I cooked for an hour, I was very worried that there was not much time! Not a recipe, but a miracle! I've read about the usefulness of chickpeas here so much that I often cook it :-)
Linadoc
Tangerines go well and they have no bitterness zest, but oranges or lemons are also possible. Don't forget sugar, it's important.
ElenkaM
Thank you. I will try. I love nute.
Linadoc
By the way, sprinkled with chopped greens of the same chickpea on top. Very simply, a handful of chickpeas are placed in a cloth-gauze-bandage and in a flat bowl of water, the water is changed every day. After 7-10 days, you can already cut and cut the greens. Taste of fresh green peas, you can also in a salad.

How interesting! Need to try!
Delait
Just finely chop the onion?
Linadoc
Natasha, yes, just chop finely.
Delait
Thank you, Nute has already boiled it, the first time it came out so soft for me, tomorrow I will finish the rest! You have to surprise your vegetarian husband, sometimes your head is spinning, what to cook for him!)))

Natasha, then he still kichiri must be done.
Delait
Ohh, for sure, I think he will appreciate it, I just didn't quite figure it out with spices, I was looking for mint for three days (and any), I found only dry, and here is cumin - is it cumin? Well, there is no it anywhere, but in the special. I can't get to the store.
Tricia
Linadoc, Wonderful recipe!
I will definitely cook it!
Delait, Natasha, yes, zira is cumin. Sometimes it is confused with caraway seeds, but I cannot imagine how this is possible - completely different smells and colors of seeds.
Linadoc

here is zira - is it cumin?
Yes, Natasha, zira = cumin. Thank you, Anastasia, already suggested! But without mint in any way, you can even buy dry in a pharmacy, but you definitely need mint. In general, it is easy to grow it on the windowsill.

Natasha, in St. Petersburg fresh mint is regularly available in chain stores both in the herb sections and in tea / brewing collections. And in Okey, and in the Season, and in others. Surely you also have large chain stores - you can search there while your own grows on the window, you can buy for future use and freeze - the aroma will remain almost the same.

Linadoc, share your technology. Probably you brought the roots from the dacha? I have 4 pots of parsley growing on the window, but there are root crops - it's easy to plant even store-bought ones, but what about mint if there is no summer cottage?

Firstly, you can have your own from the dacha with roots and seeds, and secondly, the seeds are freely sold. You can sow at any time of the year. True, it grows in my boxes on a glazed balcony, so it withers and turns yellow by winter, and fresh grows in spring (since there is no artificial lighting).
Delait
Linadoc, maybe a very stupid question, you have written 5 m in your recipe. is it for cooking chickpeas or for a mixture of spices and seasonings to add?
Anna1957
I consume chickpeas in huge quantities - on Sibarit it is one of the most popular components of the diet. There, to reduce flatulence, it is advised to imperatively soak the chickpeas overnight with baking soda, rinse in the morning, bring to a boil, remove the foam, rinse again and only then cook completely. It seems like a lot of body movements, but I'm used to it, I do it on the machine. There is really no flatulence. I got everyone around me hooked on hummus, crunches, I even tried cookies from chickpea puree (though only once in total).

Natasha, this is for boiling chickpeas, so that it is boiled, but not boiled.
Delait
Thank you, otherwise I thought it should be added to set the pressure, while I was cooking, the smell in the kitchen is simply breathtaking !!!! Now I've put everything in Shtebu, I'm waiting.
Delait
🔗 this is preparation), well, this is already ready

Tell me, does chickpea taste very different from peas?
Delait
There is a difference, there are no options, I have chickpeas somewhere in the middle between beans and peas, maybe the girls will describe the taste in more detail.
fox
So this recipe will suit me - I love both beans and peas. I'll try with peas.

Cook with peas less - 10-12 minutes is enough.

It is not only beautiful, but also very tasty ...
The only thing I had was a replacement for tangerines-oranges. But I think this did not change the taste very much, the oranges were sweet.

replacement for tangerines-oranges.
Yes, quite a normal replacement. Do it for your health!
ninza
Linochka, can you just cook it in a cartoon? Probably need to increase the time?
Linadoc
Nina, it's just that in the cartoon, all the stages must be increased 3 times in time.

Boiled chickpeas. First time in life. I ate 2 spoons after the soup to try. Delicious and satisfying. I will do it according to the recipe. Unsubscribe.
Linadoc
lily, cook for health! Very useful for women. In general, it is delicious and really satisfying. And in Shtebochka it is quick and easy.

Linadoc, thanks for the recipe for a delicious and aromatic dish! An interesting combination of ingredients gives volume, richness and richness to taste and aroma, and at the same time is very harmonious.

I cooked chickpeas in a slow cooker, slightly increased the amount of pumpkin, preheated the seasonings without oil, added dried mint when stewing, fresh mint and zest when serving.
Linadoc
Ilona, it turned out great, clever! Bon Appetit!
