Coconut roll tender

Ingredients

- flour 500 g
- coconut milk (you can cow) 270-290 ml
- butter 50 g
- pressed yeast 25 g
- sugar 125 g
- salt pinch
_____
Filling:
- pressed coconut cake from 150 gr of shavings
- sugar taste
- butter 80-100 gr
- crushed almonds optional

Cooking method

  • Coconut roll tender
  • Why didn’t I bake such a roll before - because I didn’t have a "cow"! I could not even imagine what it is - a roll with tender ground coconut cake, which remains after cooking coconut milk. The dough was specially selected simple - there are no eggs and little oil - the finished baked goods are light and tender - that's what we need!
  • I recommend this recipe to all Rafaelok maniacs! You can add crushed almonds to the filling!
  • The cooking process is outrageously simple!
  • 1. Load all the ingredients for the dough into the HP and select the program that prepares the dough without baking.
  • I have this Pizza mode:
  • 20 minutes - kneading
  • 40 minutes - 1 proofing
  • 50 minutes - 2 proofings
  • Pay attention to the dough during the kneading process, the flour is different, the dough should not be very tight, if you need to add a little milk or water.
  • 2. At the end of the program, roll out the dough for the future roll into a rectangle about 7 mm thick.
  • 3. Sprinkle with sugar, evenly distribute the coconut cake and pour melted butter on top.
  • You do not need to grease the dough with butter before sugar and coconut, otherwise when you roll it up and cut it, the inner layers will fall out, they will be slippery.
  • Just pour lightly on top of the cake, you can use a teaspoon to make it more even.
  • 4. Roll up along the long side, as if rolled up - pinch the edge to the roll along the entire length.
  • After that, you need to roll the middle of the roll a little, reducing the diameter, since the middle is usually thicker.
  • 5. Roll up with a horseshoe, connecting the ends, and cut in a circle like this:
  • Coconut roll tender
  • Anyone who wants to can bake without a mold, but I like it in a split form, this particular one is 26 cm in diameter.
  • 6. Cover and let stand for 45-60 minutes in a warm place, now it is winter and cool, so 60 minutes is better.
  • 7. Bake at 180 ° C - 50-60 minutes
  • 8. Before baking, I did not grease with anything, but after that, still hot roll, grease with melted butter.
  • We do not fly right away, let it cool!
  • The roll comes out with a thin crispy crust!
  • Inexpressible taste!
  • Coconut roll tender

Note

Coconut milk preparation in a cow is described here:
Coconut milk in a "soy cow"

Prepare without a cow like this:
1. Pour 150 grams of shavings with boiling water so as only to cover it.
2. Mix well and leave for 30-40 minutes. The shavings should swell and absorb most of the water.
3. Chop in a blender chopper and squeeze through cheesecloth.
We get cake and milk.

I made coconut milk from ordinary chips from bags, the cake turned out to be tender.
Live coconut has never tasted.

Juliawhat a handsome man! I can imagine what a scent! I can feel it even through the monitor
I'm also thinking about purchasing a "cow". And the further, the desire to acquire it becomes stronger and stronger!
julifera
The aroma is really amazing, so delicate!
I am so indifferent to baking, but this recipe is definitely worth trying!
lover
How much yeast?
julifera
lover, thanks, I was in a hurry - I forgot - both sugar and yeast
I'll add it now!
Tasha
Yulenka, thank you! : goody: Today I will bake. For filling - separately

Julia, thanks, great recipe! I, relatively recently, myself came to the conclusion that a live coconut is much better, and more profitable to buy and use in confectionery than dry ready-made shavings.

PS: I'm a maniac

Julia, wonderful roll and even coconut. My daughter is very fond of baking with coconut, you must try

The most wonderful and simplest roll to perform, Yulichka! I have a passionate lover of coconut, yesterday a rum woman soaked in syrup cooked in coconut milk, squeaks with pleasure, the last piece was already in bed (hee hee).
Now I'll get confused with a new, Yulichkin roll, thank you.

: hi: Julia, very beautiful roll, my favorite form. Oh, this "soy cow" ... My heart feels that I will have a new Wishlist. The name itself defended the "cow" - soy! I don't like soybeans, but it turns out that you can make coconut and almond milk and, perhaps, something else. And the roll is delicious ...

Girls - I also want to draw your attention (now I will add this to the recipe) - you do not need to grease the dough with butter before sugar and coconut, otherwise when you roll it up and cut it, the inner layers will fall out, it will be slippery.
Just pour lightly on top of the cake, you can use a teaspoon to make it more even.

Happy baking everyone!

Thank you, Yulichka for your valuable guidance.

Mom Tanya, Thank you!

How do we replace with dry yeast? I forgot
julifera
Live ones are replaced with simple dry ones, based on a ratio of 3 to 1
I.e:
25 g pressed ~ 8 g dry
1 scoop contains about 3 grams of dry yeast.
That is, it turns out for this recipe you need about 3 tsp dry.

Your recipe is just salvation. For a long time, coconut chips have been lying around in the closet, I bought it, but I haven't figured out where to adapt it, and here is such a delicious roll. By the way, mnu has natural coconut oil, do you think you can put it there instead of butter for watering?
julifera
Oksan, I think all the same, creamy is much tastier in the filling
RybkA
I made it, it's really gentle! Phot unfortunately not
I got a lot of the test. I baked in a glass mold, also 26 cm, but there was not enough space. The donut hole in the middle is completely overgrown. The hardest part is to cut it into pieces. I cut directly in the mold, but it was probably necessary on the table. Well, there is no need to regret the shavings, it then dissolves somewhere.
Thank you)))
julifera
RybkA - to your health !!!
And yes - I cut it on the table, and so as not to fall apart - I slip a thin board under the roll (I don't have pizza shovels) and put it in the mold.
