Ingredients

Beef pulp 400 g
Carrot 120 g
Pickle 150 g
Fine salt ~ 1/4 h. L.
Seasoning for beef taste
Ground black pepper taste
Dry red wine 20 ml
Water 40 ml
Olive oil 4 tbsp. l.

Cooking method

  • This dish is very easy to prepare, both in a slow cooker and in a pressure cooker. But in the latter, the meat is stewed 2-2.5 times faster. This is undoubtedly convenient.
  • We love the beef cooked this way. Soft but non-fiber.
  • The dish turns out with a very rich taste. For some reason, any side dish (not even the most beloved one) sprinkled with sauce from stewing ends in plates very quickly.
  • Cooking.
  • Cut the beef into cubes. Sprinkle with pepper and seasoning. Do not salt!
  • (Unfortunately, in the final photo, the meat is cut into cubes. I accidentally defrosted a bag of meat for goulash.)
  • Cut the onion into quarters. Carrots - in cubes.

  • Turn on "Frying" mode pressure - 3.
  • Fry the carrots and onions in oil, slide them to the edges of the pan. Place the beef and fry until golden brown. (The whole roast took me 10 minutes)
  • Add the pickled cucumber, cut into cubes. Pour in wine and water. Salt.

  • Cook on program "Meat on the bone / Jellied meat", pressure - 3, time - 40-45 minutes. (Look at the quality of the meat.)
  • Switch off the appliance after the ready signal. After about 5 minutes, open and serve.

  • Any side dish: buckwheat, potatoes, rice, etc.

Note

The taste of the dish largely depends on which cucumber you add. I take homemade salted (like cask). It is with them, as it seems to me, that the dish turns out best. But, of course, you can cook such beef with pickled cucumbers.

It is important not to oversalt the dish. Consider the salinity of the cucumber.

Wine can be completely excluded from the recipe by replacing it with the same amount of water. The amount of liquid can be increased slightly, since the sauce is delicious. But too much increase can lead to the fact that the dish turns into soup, and the meat is just boiled.

Carrots are very tasty. I usually add a little bit to stews. And for this dish I specially take more.

It seemed to me that potatoes must certainly be present in the basics, previously fried separately, they turn out to be excellently tasty (and tomato). But, of course, you can do without it, if you want with buckwheat or rice. Then, probably, this is no longer azu, but beef with pickles ... I believe that it is also delicious!

1. In Polaris, the countdown begins after the pressure builds up. And when cooking this dish, it takes 5-7 minutes in total.
2. I relieve the pressure forcibly no more than 2 minutes.
3. The quality of the meat was not very good ... Not a tenderloin, for sure.
