Neapolitan curly puff. Sfogliatella napoletana riccia

Ingredients

Wheat flour 500 g
Water 190 ml
Honey 15 g
Salt 5 g
butter 150 g
Semolina 150 g
milk 400 g
Sugar 200 g
Ricotta 250 g
vanillin
cinnamon

Cooking method

  • I have long wanted to bake these cakes, but I was afraid. that I can't roll out the dough thinly. Now, with the advent of the dough sheeter, it's just a couple of trifles. And so - dissolve salt in water, add honey and try to mix all the flour. This, I tell you, is something! At first, the dough looked like dried mastic, divided into a thousand pieces and did not stick together under any circumstances. After 20 minutes of torment, I got a dense piece of dough, which I slightly greased and sent under the film to rest for a couple of hours. During this time I prepared a cream.
  • I cooked a thick semolina porridge. Then she added sugar, cooled and mixed with ricotta.
  • I took the dough, during this time it became more elastic, divided it into 4 parts and rolled out each part on my ATLAS to the state of parchment paper. The result is long thin sheets of a meter and a half. She smeared the entire surface of the tape with melted butter and tightly rolled it into a roll, then wrapped the roll in a film and in the refrigerator until morning.
  • In the morning, the final part of the Marleson ballet. I took out the dough and cut it into 1 centimeter thick circles. Then, from these circles, form cones, putting them on the index finger of the left hand, in general it is written for a long time, but quickly done. Fill each cone with cream, pinch the edges and bake for 20 minutes at 200 degrees. Remove from oven, cool, sprinkle with icing sugar.

Wow, how cute, Lenus! Current I'm afraid that I will have to pull these cones on something else. And then I'm picking the hole with my fingernail! What to attach to?

Great!
So I realized that you don't have to pinch the edges?
What's the best?

nut
I can imagine how tasty it is: nyam: All the kneading technique is there, there is rolling out - it remains only to ripen I figured out where to put the nail - you need to wind a plaster neatly on the end of the finger with the nail or put on a thimble - it is more convenient with a thimble - the dough glides well over it, I'm like once made the dough for dumplings and conducted the experiment
Silva2-Lena- how many things did you get? What kind of flour is this type 0 - can you see the photo of the pack?

the edges are really better not to pinch. as experience has shown. The puffs are neater. Cream does not leak
