CZECHOSLOVAK CUISINE. Czechoslovak cuisine is characterized by the widespread use of a wide variety of products. Pork, chicken, potatoes, cabbage and other vegetables are popular. Dishes made from natural meat, veal, game, and dairy products (cream, sour cream, etc.) are widespread. Fish is used less often, mainly for preparing cold snacks.

In Czechoslovak cuisine, lamb and minced meat dishes are not prepared. The main feature of the national cuisine is a wide range of cold dishes and snacks.

Czechs love various vegetable salads, seasoned with mayonnaise, sour cream, lemon juice, etc. Mayonnaise is widely used for preparing not only cold dishes and snacks, but also second courses. Czechs also love pastries, cookies, cakes and other pastries. To prepare the dough, local chefs use lard, vegetable oil, margarine, and less often butter. Confectionery products are mainly baked in small sizes. The first courses are made from transparent chicken noodle soup, broth with egg, potato soup, soups with various vegetables. Many soups are cooked with vegetable broth and seasoned with lezon. Popular dishes include fried pork with dumplings and stewed cabbage, chevabchichi, razhnichi, schnitzels, Karlovy Vary roll, fried goose with dumplings, fried carp, etc. Vegetable garnish is most often served with the second courses. Various spices and seasonings are widely used for cooking. Favorite hot drinks - natural coffee, tea with rum. Beer is very popular, especially Pilsner beer.
