  • Phali (sometimes they say mkhali) is not one specific dish, but a whole series of dishes prepared according to the same principle. Most often these are vegetables or herbs with walnut sauce. I always joked that with this sauce you can eat nails and not notice, it will be so delicious.
  • Phali can be made from beets and beet tops, spinach, cabbage, green beans, nettle, asparagus ...
  • The principle of cooking is the same everywhere, with minor nuances. Served both as an independent dish and as an appetizer. Not a single festive Georgian table is complete without this appetizer. Usually served on small flat plates. By the way, this dish can also be cooked during Lent, which often helps those who observe it, as it is tasty and high in calories.
  • In the absence of all of the listed spices, you can take suneli hops.
  • Frozen asparagus beans produce very good phali, while fresh asparagus beans are not always available.
  • 1. Boil the beans until tender. Ice cream is cooked very quickly, it is important not to boil it, 5-6 minutes is enough. Fresh takes longer to cook, and its pods must be cleaned of fibers. Put on a sieve and immediately immerse in cold water with ice so that the beans do not lose their green color.
  • 2. Prepare the peanut sauce. To do this, grind nuts, garlic, herbs, spices and salt in a blender. You can grind it in a mortar. Then grind this mixture well with a tablespoon of boiled water and add pepper and wine vinegar to taste.
  • Onions and I like to add to green beans pkhali sautéed in vegetable oil. But some add raw. In this case, it is cut very finely and poured over with boiling water to remove excess bitterness.
  • 3. Combine the beans with peanut sauce and let it brew. It should be borne in mind that when the beans are soaked, they will take away some of the spices, so you have to try often. When serving, sprinkle with pomegranate seeds.
  • It is very tasty with lavash, but you can serve it with any flatbread and even with any fresh baked bread.
