BULGARIAN CUISINE. It is based on various vegetables, freshwater and sea fish, meat, game. As for meat products, Bulgarians prefer lamb, but they also cook a lot from beef, pork and poultry. The heat treatment of products is different, but stewing prevails. Meat and vegetables are usually stewed with hot spices - garlic, pepper, onions, vinegar, and aromatic herbs. Vegetable oils (olive, sunflower) are mainly used for frying and stewing.

Popular in Bulgaria are meat dishes cooked on a spit or on a wire rack over hot coals. The traditional meat dish is the lukanka sausage, which is served with a spicy sauce. Vegetables are widely used in Bulgarian cuisine: raw and boiled, stewed and fried, pickled. They are served as a separate dish and as a side dish. Vegetables are one of the main ingredients in first courses.

Milk and lactic acid products occupy a prominent place in the diet of Bulgarians. Sour milk, yogurt, prepared in a special way, is especially popular. It is served with different spices - garlic, sugar, jam, chopped herbs, etc. Yoghurt is part of many first and second courses.

Favorite dishes of Bulgarians are tarator (cold soup made of yogurt, cucumbers, garlic and grated walnuts), feta cheese, sheep cheese, jerky goat meat, lutenitsa (hot sweet pepper sauce), banitsa (puff pastry with vegetables and feta cheese), etc. Salads are popular at any time of the year and are served for lunch and dinner, as a side dish and as an independent dish; they are seasoned with wine vinegar, vegetable oil, hot pepper, mayonnaise, sour cream. Salads are rarely seasoned with sugar. The most common of the first courses is the Bulgarian chorba.It can be prepared from a variety of foods: vegetables and fish, poultry and meat, mushrooms and beans. At the end of cooking, it is seasoned with browned flour with the addition of red pepper, a mixture of beaten eggs and yogurt.

All dishes are abundantly flavored with spices and seasonings.

Dough products are widely used. Banitsa is prepared with a filling of feta cheese and eggs, minced meat, spinach, cabbage, leeks. It can be sweet - stuffed with ground or crushed nuts with sugar, crushed pumpkin with sugar, etc. Fruits and juices are also served at the dinner table. Salads, jelly, jelly, compotes and creams are prepared from fruits.
