Shaped white bread by Michel Suas

Ingredients

Preferment:
Wheat flour (I have 1 grade) 90 g
Water 59 g
Fresh pressed yeast 1.4 g
Salt 1.7 g
Dough:
Prefermento all
Wheat flour (I have 1 grade) 305 g
Water 192 g
Fresh pressed yeast 3 g
Salt 6 g
Sugar 15.2 g
Butter cold (I have butter + lard) 30 g
Powdered milk 15.2 g

Cooking method

  • For pre-ferment, mix all ingredients, close. Leave at room temperature for 1 hour, then put in the refrigerator overnight. I got 18 hours.
  • Remove from the refrigerator 1 hour before baking to warm.
  • For the dough, combine all ingredients (except oil).
  • Knead for 5 minutes at low speed. Cover the dough and leave for 20-30 minutes. Then knead for 5 minutes at 2nd speed, add oil (at slow speed) and knead for another 5 minutes at 2nd speed.
  • Fold the dough, place in a greased container, cover and leave for 30 minutes. Then knead the dough, fold, return to the container and leave for another 30 minutes.
  • Then knead the dough, form a ball, cover and leave on the table for 30 minutes.
  • Form a workpiece, put in a mold (volume 1.7 l) and leave for 70-90 minutes.
  • Bake in an oven preheated to 200C for about 35 minutes. The exact time depends on your oven.
