Ingredients

a hen 1.5KG
beef bone marrow with almost no meat 1 PC.
medium onion 1 PC.
small carrot 2 pcs.
parsley root 1 PC.
parsley stalks 1 bundle
salt
for pancakes:
flour 150 g
eggs 2 pcs.
milk 250 ml
salt
vegetable oil

Cooking method

  • A very delicate soup with a fragrant broth, I take this broth on board - the soup turned out to be a decoration of the dinner (and not a dessert, as it usually happens with me). Pancakes instead of noodles are a new solution, the taste is not omelet or noodles, the fact that these are pancakes can only be guessed by their appearance, I would rather compare the taste with dumplings.
  • For broth, cut the chicken into several parts, put in a large saucepan, put the bone there, pour 3 liters of cold drinking water and bring to a boil over high heat. While the broth is simmering, peel the vegetables, cut into 2 or 4 pieces and fry, cut side down in a dry skillet, until brown.
  • Remove foam from broth, season with salt, add vegetables and parsley stalks, reduce heat to low. After 1 hour 20 minutes. remove the chicken and remove the meat from the bones, cook the broth for another 40 minutes. Strain the broth. No vegetables or bones are needed.
  • While the broth is cooking, make pancakes. For the dough, combine milk and eggs. Sift flour and salt and, stirring with a whisk, pour in the egg and milk mixture. The dough should be completely homogeneous. Let it stand for 30-40 minutes.
  • Fry small, thin pancakes, oiling the skillet with a cooking brush each time before pouring the dough.
  • Cool the finished pancakes completely.
  • Cut the pancakes into strips. Place the strips of pancakes in deep bowls and pour in a very hot broth, sprinkle with herbs. Chicken can be served separately.

back in November I bought a magazine with a good selection of German cuisine dishes - the photos are very inspiring I liked this soup, it looks like soup with dumplings, I cooked something else according to the magazine's recipes - I will definitely add here, just the cuisine is close to us in taste combinations, but its own an interesting note
