Braided lemon pie

Ingredients

Opara
wheat flour 38 g
water 85 g
dry yeast 1.5 tsp.
sugar 1 tsp
Main dough
dough
yogurt 85 g
butter (soft) 55 g
egg 1 PC.
sugar 50 g
salt 1 tsp
vanilla extract 1 tsp
wheat flour 300g
For filling
sugar 50 g
sour cream 60 g
flour (if cream cheese) 28 g
lemon juice and lemon zest 2 tsp
cottage cheese (cream cheese) 140 g
lemon Kurd 120 g

Cooking method

  • Braided lemon pie
  • Opara
  • For the dough, mix all the ingredients. Stir until smooth. Cover with plastic wrap and leave for 10-15 minutes.
  • Main dough
  • In a food processor, combine yoghurt, butter, eggs, sugar, salt, and flavor. Then gradually add flour. Mixing should be started at first speed. Then increase the speed to 2, and continue kneading until the dough is soft, elastic and homogeneous.
  • Transfer to a container and leave to rise in a warm place for 1 hour. During this time, the dough should double in size.
  • During this time, cook stuffing.
  • To do this, mix all the ingredients until smooth. I had cottage cheese, I rubbed it, with the rest of the components, using a multi-mixer. I also added 2h. l. semolina instead of flour.
  • Braided lemon pie
  • After the time has elapsed, knead the dough. Form and roll into a rectangle. Divide visually into 3 parts. Leave the middle, and cut the edges into strips (I did it with a pizza knife)

  • Now we distribute the filling in the middle. First, apply a curd layer

  • and spread the lemon curd on top with a thin layer.

  • Wrap the edges of the pie over the filling, crosswise.
  • Braided lemon pie
  • All this is best done immediately on parchment paper. It is more convenient to transfer it to a baking sheet.
  • Cover with plastic wrap and let stand for 45-50 minutes.
  • Before baking, grease the cake (yolk + 1 tsp. Water) and sprinkle with coarse sugar.
  • Furnace at 200C, 30 minutes.
  • Cool the finished cake.
  • Delicious!
