Delicate buns (based on Creme patissiere)

Ingredients

Dough:
flour 100 g
water 100 ml
sugar 1 tsp
fresh yeast 11 g
Cream:
milk (2.5%) 220 ml
eggs (large) 1 PC
sugar 70 g
corn starch 15 g
vanilla sugar 0.5 h l
lemon peel 0.5 h l
Dough:
all dough
whole cream
flour 300 g
butter 50 g
Crust:
almonds (peeled almonds) 20 g
Brown sugar 2 h l
cinnamon 0.5 h l
egg yolk 1 PC
milk (2.5%) 1 tbsp

Cooking method

  • 1. For dough, grind yeast with sugar, add water at room temperature and stir until smooth. Combine with flour, a whisk or just a spoon, knead the batter and leave to ferment for 15-20 minutes.
  • 2. For the cream, mix sugar, starch, vanilla sugar. Add slightly beaten egg and 50 ml milk and stir until smooth. Bring the remaining milk to a boil, combine with the egg mixture and, stirring continuously, boil over low heat until medium thick. Add lemon zest and cool to room temperature.
  • 3. For the dough, grind the flour by hand with chopped pieces of cold butter until fine crumbs are formed. Add dough, cream and knead soft, elastic dough (I knead at medium speed for 6-8 minutes). Leave the dough to rise for 45 minutes (or until it has increased in volume by 2.5-3 times).
  • 4. Divide the finished dough into 70-75 g pieces and form into round buns. Dip each bun first in the yolk-milk mixture, and then in the crust mixture. For her, grind almonds very finely and mix with cinnamon and brown sugar.
  • Leave the buns for proofing for 30 minutes. Bake in an oven preheated to 190C for 15-20 minutes.
