Ingredients

Flourless chocolate cake:

Cooking method

  • Form -24 cm.
  • 1) Chocolate sponge cake without flour: preheat the oven to 180 ° C. Cover the baking sheet with baking paper. Beat the whites with a pinch of salt, gradually adding sugar, until stable peak forms. Melt the chocolate in a water bath together with butter. Allow to cool slightly, stir in the yolks, one at a time, stirring thoroughly after adding each. Add the whipped egg whites at the end. Mix gently with a spatula. Spread the resulting mass in a thin even layer over the form, covered with parchment for baking. Bake for about 10-12 minutes. Cool the resulting biscuit completely. Then carefully (the biscuit is very tender) put it on a plate, set the ring from the split form around. Lay the walls with a thick film (I used a film in a roll, in which flower bouquets are wrapped). Leave.
  • 2) All three mousses are prepared using the same technology.
  • Chocolate mousse: Soak gelatin in cold water. Heat the milk. Stir gently into the yolks mixed with sugar. Boil the resulting mixture until lightly thickened. Remove from heat, add chopped chocolate, then soaked and squeezed gelatin. Cool the resulting mass and add the whipped cream at the end.
  • 3) Assembly: put dark chocolate mousse on top of the chocolate biscuit. Put in the refrigerator until it solidifies completely (it took me 2 hours). Then add the milk chocolate mousse and refrigerate again. When the mousse hardens, put the last one - white chocolate mousse and put it back in the refrigerator for several hours. When the top mousse also hardens, pour the surface of the cake with white chocolate glaze as thin as possible. Let it freeze in the refrigerator.
  • 4) White chocolate glaze:
  • 37 g water
  • 75 g sugar
  • 75 g glucose syrup
  • 50 g cold milk
  • 75 g white chocolate
  • ~ 5-7 g gelatin
  • Soak gelatin in cold water. Bring water, sugar and glucose to a boil (103 ° C), remove from heat, add cold milk, then chopped chocolate. Stir and add gelatin. The mass should be absolutely uniform, without lumps of chocolate. Cool the mass to ~ 30-35 ° С and use immediately.
  • 5) Decoration: decorate the cake with chocolate before serving.

Note

I propose another version of the famous Three Chocolates cake. It turns out to be tender, like a light pudding, moderately sweet and chocolatey. Flourless thin chocolate crust is very suitable for this cake.

- In the original recipe for the cream, only 35% cream is used, but I used milk and whipped vegetable cream.
- The original contains the glaze recipe, but I didn't have enough chocolate for it. As a decoration, she chopped up the remaining chocolate with a knife and sprinkled on the cake.
