  • Recently, quite often in the Polaris thread, new multi-users have asked questions about how to cook vegetables for salads and vinaigrettes.
  • Unfortunately, there is no universal recipe, since vegetables are not only of different sizes, but also of different densities. In addition, the cooking of vegetables that have just been picked from the garden is much faster than those that lasted until late winter.
  • But you still need to be guided by something when you set the cooking time for vegetables for a salad. Therefore, having welded several batches of root crops of different sizes with changing pressure, I decided to share my observations and experimental results.
  • Cooking.
  • Place a silicone mat (oven mitt) or a cloth napkin at the bottom of the pressure cooker pan. Install the supplied steam grill on it.
  • Beetroot boiling.
  • Wash the beets thoroughly with a brush.
  • Pour 250 ml of the hottest tap water into a saucepan. Place the beets on the wire rack.
  • Close the cover, set the valve to the "Pressure" position.
  • Steamer mode, pressure - 3, time:
  • - for beets d = 5-6 cm - 22-25 minutes;
  • - for beets d = 7-8 cm - 25-28 minutes.
  • (The pressure gain (up to the "P" icon) lasts 5-6 minutes.)
  • After the signal of readiness, forcibly release the pressure by covering the valve with a towel folded in 4 rows. (It takes 20-30 seconds to relieve pressure.)
  • Pour cold water over the beets for 15 minutes.

  • Cooking carrots.
  • Wash carrots thoroughly with a brush and place on a wire rack.
  • Pour 200 ml of very hot tap water into a saucepan.
  • Close the lid, set the valve to the "Pressure" position.
  • Select Steamer mode:
  • IN 1: pressure - 2
  • - for large carrots 15 cm long, d = 3 cm time - 15-17 minutes.
  • IN 2: pressure - 3
  • - for large carrots 15-16 cm long, d = 3 cm time - 15-17 minutes;
  • - for medium carrots 12 cm long, d = 2 time - 12-14 minutes.
  • (Pressure build-up (until the “P” icon appears) for about 4 minutes.)
  • After the signal of readiness, release the pressure in the same way as when boiling beets.
  • (It takes 20-25 seconds to release the pressure.)
  • Remove the carrots, cover with cold water for 5-7 minutes.
  • Boiling potatoes.
  • Wash the potatoes thoroughly and place them on the wire rack.
  • Pour 200 ml of the hottest tap water into a saucepan.
  • Close the cover, set the valve to the "Pressure" position.
  • Select Steamer mode:
  • IN 1: pressure - 2
  • - for potatoes 8-8.5 x 5-5.5 cm time - 15-17 minutes.
  • IN 2: pressure - 3
  • - for potatoes 8 x 5 cm time - 15-17 minutes.
  • (Pressure build-up (up to the "P" icon) for about 4 minutes.)
  • After the signal of readiness, forcibly release the pressure, as when boiling beets or carrots.
  • Pour potatoes with water for 5-7 minutes.

Note

Conclusions:

1. It takes the same time to cook old potatoes and carrots at different pressures.

2. Lower pressure (2), I think, will be relevant for cooking young crumbly potatoes.

3. The cooking time varies depending on the size of the root vegetables and how tightly the vegetables are packed. Try to keep a distance between the roots and do not stack them on top of each other.

4. Vegetables can be stacked vertically, but then the time should be increased by 2-3 minutes.

And I cook all the vegetables together, put the beets first, then the potatoes, and the carrots on top. Steam cooking, level 3, 15-20 min. depending on the number and size of vegetables.

Girls, you can cook by combining vegetables as you like. In some photos, it is noticeable that more than one type of root crop is being cooked for me (as a rule, carrots and potatoes together).
You can stack them on top of each other, but then there is a danger of digesting the lower vegetables. Still, for steam to pass, you need some distance between the products. I always observe this in a double boiler.
At the beginning of the recipe, I indicated that my goal was to determine the approximate cooking time for each vegetable. To have something to focus on at first.

Mowgli, you misunderstood the work of the program. Steamer mode works under pressure!!! Therefore, vegetables are cooked so quickly! In an ordinary electric steamer or multicooker at such a speed, root vegetables will never be cooked.
Almost any program can be adapted for conventional boiling in water.

Enters the pot when pressed (therefore cannot be used in a coated bowl!). But it gets stuck somewhere in the middle. It's comfortable. I pour half a glass of water down. And I lay out the vegetables on the walls:
