Dzatziki Greek Sauce

Ingredients

Large cucumber or 2 medium
Thick yogurt
(no flavors)
or sour cream
(you can yogurt)
2 tbsp.
Garlic 3-6 cloves
Olive oil 2-3 st. l.
White wine vinegar
(can be replaced with lemon juice)
1 tsp
Dill greens
(you can add a little mint)
Salt, pepper to taste

Cooking method

  • Grate cucumbers on a fine grater, after peeling it from the skin, squeeze the pulp, salt. In a deep bowl, combine yogurt, crushed garlic and herbs. Add here squeezed from moisture the pulp of a cucumber, olive oil, vinegar, salt, pepper. Stir, refrigerate before serving. Dzatziki is served with meat dishes and as an independent snack. Sprinkle with herbs again before serving, or sprinkle with paprika and olives.

You can reduce the amount of yogurt or sour cream - you can add more lemon juice, it all depends on your taste. The main thing is to squeeze the cucumbers, then the sauce will not be liquid.

Another very easy version of the sauce for meat, for some reason our neighbors call it Tuzluk (I deeply doubt that this is its native name):
thick sour cream + crushed garlic (3-6 cloves of your choice) + salt, pepper + herbs (any).

Stir and refrigerate for a couple of hours (to infuse).

In our Greek cafe, they still do this: they do not cut the cake completely and put it in this pocket: meat or chicken shawarma (I don't know if I put it right), french fries, tomatoes, cut cucumbers and pour everything over with tzatziki sauce. It is called "Giro". Also very tasty. My son calls Krabsburger (Spongebob loves to watch)

Oh, I just made from what was, but there was everything except greens, and my own yoghurt, homemade .. mmmm ... delicious, and what a smell ... it will go well in summer
