Ingredients

Pancake dough:
milk 450 g
cream 20-25% 200 g
eggs (large) 5 pieces
wheat flour c. from. 200 g
salt 1 tsp
powdered sugar 70 g
butter 20 g
Custard:
milk 150 g
cream 20-25% 35 g
yolks 3 pcs
granulated sugar 60 g
corn starch 15 g
Mascarpone cream:
custard whole
mascarpone 250 g
cream 33-38% 200 g
chocolate white 100 g
coffee extract 1 tsp
coffee liqueur 2 tbsp. l
Berry sauce:
berries 250 g
granulated sugar 50-100 g
corn starch 12 g
Additionally:
almond petals for decoration 20 g

Cooking method

Pancakes


Beat eggs with a whisk with salt and icing sugar, combine with milk and cream.
Add sifted flour and stir so that there are no lumps.
Add melted and cooled butter, stir.
Let the dough stand for 10-15 minutes (the dough is very liquid).
Bake pancakes in a well-heated skillet with one side... As soon as the surface of the pancake becomes matte and "sealed" - you can remove the pancakes from the pan and stack them in a pile, cool completely. From this amount of dough, I got 22 pancakes with a diameter of 21 cm.

Custard


Beat the yolks with sugar and starch until fluffy, light mass.
In a saucepan, bring milk and cream to a boil. Pour about half of the milk mixture into the yolks, stirring vigorously. Pour the mixture into a saucepan, put on low heat. Cook, stirring occasionally, for about 2-3 minutes, without letting the mixture boil.
Once the mixture thickens a little, remove from heat, add the white chocolate pieces and stir until smooth.
Tighten the container with cling film so that it touches the surface of the cream, cool.
Mascarpone cream
Whisk the mascarpone lightly. Beat the cream until almost strong.
Gently pour the mascarpone into the cream, in two or three steps. Stir until smooth.
Add the extract and liqueur (did not add) to the custard, then gently mix the creamy mass, stir until smooth. Remove the cream for 3-4 hours in the refrigerator.


Berry sauce


Defrost the berries (if frozen) a little, add granulated sugar. Boil over low heat until the berries are soft (5-10 minutes).
Part of the berries, about 100 g, can be set aside to decorate the cake (did not leave), the rest of the berries are mashed and rubbed through a sieve.
Return the berries to the fire, bring to a boil, add the starch. Simmer over low heat for about 5 minutes until thickened. Cool to room temperature, cover with foil and refrigerate until completely cooled and used.


Assembly


On a serving dish alternately lay out pancakes, greasing each of them with cream, about 1.5-2 tbsp. l. cream on a pancake, depending on the size of the pancake (I have one and a half spoons). So collect the cake until you run out of cream or pancakes. You don't need to cover the final pancake with cream. Put the cake in the refrigerator overnight.
An hour before serving, pour the berry sauce onto the completely cooled cake, garnish with set aside or fresh berries and almond petals. Bon appetit and delicious Maslenitsa!
