dry yeast 2.5 grams

dried apricots cut 60 grams
chocolate (I have black) 80 gram
sugar 40 grams
Fine sea salt 4.7 grams

Cooking method

  • Leaven.
  • In the evening we feed the mature leaven. We leave at room temperature for 8-12 hours.
  • Dough.
  • In a separate bowl, stir the flour and cocoa powder well, add and stir the yeast. Combine water, starter culture, flour mixture, and sugar until moist. Leave the dough to autolysis for 20 minutes. We start kneading, gradually adding oil. When the oil is well mixed, add salt and knead soft, elastic, shiny dough. The batch took me 20 minutes. Add water if necessary. I added 2 tablespoons *** The author recommends a mild one. sticky dough. I just have good soft. Stir in with your hands or at low speed with a hook, the chocolates, broken or cut into pieces, and dried apricots. Round the dough, put it in a greased container and let it ferment for 2.5 hours. During this time, stretch-fold the dough 2 times after 50 and 100 minutes. Roll the dough into a ball, releasing large bubbles, and leave to rest for 20 minutes. We form a round or oval bun. Leave in the basket for proofing, seam up, for 1.5-2 hours. After fermentation, the bread can be refrigerated overnight. Take it out, knead it and put it to proof.
  • We bake on a stone with steam at 230 degrees for the first 15 minutes. Then remove the steam, ventilate the oven. Reduce the temperature to 180 degrees. Bring the bread to readiness. My baking time was 25 minutes.

Note

Sources here. 🔗... This is a recipe for chocolate bread with dried cherries. Classic! But I can't find a cherry in the afternoon with fire. Therefore, I decided that it would not be bad with dried apricots. It turned out sooo tasty. I have reduced Tatiana's recipe three times. Water had to be added, but this does not contradict the recipes. Tatyana bakes it in molds more often. This is probably correct. Hearth bread may be tastier, but with molded chocolate it will burn less and the bread will not be so tanned. The oven will definitely be more than once.

Thanks for the kind words! Not a masterpiece, of course, but ... a masterpiece!

: hi: The bread is good! The crumb (y) is small-hole, not friable-muffin like in a chocolate truffle. And it should be very tasty. Definitely dessert.

I baked this bread today)
It turned out not as airy as expected, but I only bake with sourdough, no yeast 😊
Instead of butter, I have coconut oil and I just had dried cherries lying around and I successfully disposed of it)))
The bread is very tasty, I eat the second piece with tea 🍞☕
