Ingredients

For 750 g:
Wheat flour, premium 280 g
Millet flour. 1st grade 100 g
Ryazhenka 3.2% 100 ml
Milk 100 ml
Water 50 ml
Pressed yeast 8 g
Sugar 1.5 tbsp. l.
Fine salt 3/4 tsp
Vegetable oil 1.5 tbsp. l.

Cooking method

  • I suggest you bake a wheat loaf without using a bread machine or a combine. It is not so difficult. And the bread turns out to be both beautiful and tasty. Slightly sweet, with a creamy touch. Very gentle.
  • Cooking.
  • Yeast activation.
  • Stir yeast in water, add 0.5 tbsp. l. sugar (from the norm) and 2 tbsp. l. flour (from the norm). Rub everything until smooth. Let stand for 10-15 minutes.

  • Kneading.
  • Sift two types of flour (you can replace 1st grade flour with high-quality flour) into a bowl. Pour in milk, fermented baked milk, activated yeast. Add salt and remaining sugar. Knead the dough. (Crumple it and hit it well with your hands.) It should be sticky.

  • Add vegetable oil and knead everything together. The dough should become smoother and more pliable.

  • Insert the bowl into the pressure cooker, turn on the “Warm up” program.
  • Unplug it after exactly 1 minute. (The pan heats up quickly and if you hold it for more than 1.5 minutes, the dough will stick strongly from below.) Unplug the pressure cooker.
  • Place a mold with dough or a mat on which to place the dough in the bowl. Close the cover.

  • Keep it on for 30 minutes.
  • After this time, the dough will grow and look like this.

  • When the timer runs out, take out the dough together with the "dishes". Work out with your hands.

  • If the pressure cooker bowl is still warm enough, then do not turn on the "Heating", but put the dough with the "dishes" in the bowl again.
  • If the bowl is cold, turn on the "Heating" for 1 minute. Then turn off the device.
  • Place the dough on the 2nd proofer.
  • Start the timer for 20 minutes.

  • After this time, take out the dough, knead it.

  • Remove the bowl from the appliance. Grease the bottom and bottom of the sides with margarine. Lay down the dough. Flatten the top.

  • Let the dough rise for 50 minutes.

  • Remove the dough from the refrigerator before baking.
  • Proceed as described in Proofing 3 (B-1). Only let the dough rise not 50 minutes, but 1 hour.
  • Bakery products.
  • After 50 minutes, turn on Baking program, pressure - 2, time - 70 minutes.
  • Open the cover after the beep. The top of the bread will be completely white, but with a slight pressure on it, it quickly returns to its original shape.

  • Remove the pot. Let the bread stand for 10 minutes without removing it.
  • Then carefully remove the loaf.

  • Or you can return the bread to the bowl by gently lowering the top down.

Note

Fermented baked milk in the recipe can be replaced with sour cream (10-15%) or made a mixture of kefir and sour cream.
