Italian ice cream with ricotta (Gelato alla ricotta) in Brand 3812 ice cream maker

Ingredients

milk 3.5% 200 g
granulated sugar 180 g
ricotta 250 g
cream 33-38% 250 g
vanilla sugar 10 g

Cooking method

  • Combine milk, sugar and vanilla sugar in a saucepan, heat to dissolve the sugar. Cool down.
  • Add milk to the ricotta in small portions, whipping the mixture with an immersion blender. Refrigerate for three hours.
  • Add whipped cream and stir.

  • Pour the mixture into an ice cream maker and freeze. The default cooking time is 1 hour. My ice cream was ready in 45 minutes.
  • Serve with fresh berries or topping.
