Ingredients

Chatterbox:
Water 150 g
Wheat flour (I have 1c) 100 g
Dry yeast (Saf-Moment) 3 g
Honey 30 g
Dough:
Chatterbox all
Wheat flour (I have 1c) 250 g
Oatmeal flakes (Hercules traditional) 80 g
Whole grain wheat flour 80 g
Water (I have serum) 200 g
Ghee butter 25 g
Salt 7 g
Raisins 100 g

Cooking method

  • For a chatterbox, heat water and honey to 40C, add flour and yeast, beat until smooth and leave for 15-20 minutes.
  • Fry the flakes in a dry frying pan, chop.
  • For the dough, add all the ingredients, except the raisins, to the mash. Mix on low speed for 2 minutes. Then knead until smooth at high speed for 7 minutes.
  • Then add the raisins at low speed or knead in with your hands.
  • Fold the dough, place in a greased container, cover and leave at 30C for 30 minutes.
  • Then fold the dough again, return to the container and leave at 30C for 60 minutes.
  • After a while, knead the dough. Form a loaf or bun, place in a proofing basket with the seam up, cover and leave for 45-60 minutes.
  • Sprinkle with water before baking.
  • Bake on a stone in an oven preheated to 230C for about 10 minutes, then reduce the temperature to 200C and bake until tender. The total time depends on your oven. I have 40 minutes.

  • As always, closer to night it turns out that there is no bread in the house. I pushed the bread maker so far that one thought to climb under the ceiling terrifies .. or rather, just laziness. I had to come up with a quick and easy bread. And since I have recently become addicted to cz flour, the bread turned out to be also healthy. And most importantly - very tasty and aromatic. You can eat instead of a roll of tea without anything.

And to what extent to fry and grind the flakes?
And can not they be replaced with oat bran?
And will the result suffer greatly if you take not ghee, but just butter, only 10 percent more, right?

The flakes were fried until the appearance of a "nutty" smell, practically the color did not change, and became a little golden in some places. Crushed into "dust". I don't use butter at all, it turns out more aromatic from ghee. It seems to me, on the contrary, to take less. There is less liquid in ghee.

So if there is less liquid in the melted liquid, then you need to take more creamy one. There is 97-99% fat, and 82 in butter.
That is, to get 100 gr. ghee you need to take 120 gr. creamy.
You can, of course, minus the whey in the recipe a little.
