Cooking method

  • Brewing beer from malt and hops using an infused malt mash is a tedious task. This is now done by breweries, which then sell the extract (concentrate) of beer specifically for home brewing. The concentrate is a thickened beer wort made from blended varieties of malt and hops. At home, beer is brewed on the basis of only four components: beer concentrate, dry yeast, sugar and water. We start by sterilizing all containers and accessories (this is the only time-consuming process). In a separate sterile container, we dilute brewer's yeast in 100 ml of 30 * C water, close with a sterile lid and leave for 30-40 minutes. Next, in a saucepan with a capacity of 5 liters or more, cook sugar syrup from 2 liters of water and 1 kg of sugar. Add the wort concentrate there, mix it, pour it into a fermentation container (I have it - a 30L plastic canister, into the lid of which a water seal is screwed). We add water there to a total volume of 25 liters. Mix well and if T wort is 18-24 * C, then pour in the loose yeast. Close with a lid with a water seal and leave to ferment for 5-8 days at T = 18-24 * C. When no more gas is released through the water seal, the "young" beer is ready. For additional fermentation, place the container with fermented beer at a certain height and through a siphon tube (so as not to overflow the sediment), pour it into sterile bottles, into which sugar syrup has been poured in advance. We prepare the syrup at the rate of 9 g of sugar per 1 liter of beer. Since we get 23 liters from 25 liters without sediment, the syrup must be cooked from 228 g of sugar and 228 ml of water. It is convenient to add syrup with a 20 ml syringe, 20 ml for each liter. You can pour bottles with screw caps in 0.5 liters (48 pcs are needed), but they are difficult and time-consuming to wash. So I bottle it in 1 liter plastic bottles. I do not advise more than 1 liter of volume, because it then foams badly. Do not add 5 cm to the fermentation neck. Close the bottles tightly and leave them at room T for 5 days, then transfer them to a cool place for 1-2 weeks to ripen. Then you can drink it. It is "alive", unfiltered and without preservatives. While it ripens, I put a new portion to ferment.

I don't really like Eli - they taste bitter, I like sweeter and lighter varieties (like Draft). When choosing the type of wort, read the description of the final taste. Each can of concentrate is accompanied by the type of yeast necessary for this particular type of beer.

Then we fought with the water seal, because it was homemade and did not want to work correctly. And only in the morning it turned out to be installed correctly. And fermentation was already in full swing. Now we have gone to work, and the cat stayed to watch for the bubbles .... as if he didn’t overdo it, otherwise he likes to help where they don’t ask. I hope that it will ferment and not sour.
