Chicken tobacco from Ilya Lazerson

Ingredients

Gutted chicken about 700 gr 1 PC.
Lemon 1 PC.
Sunflower oil
Salt
Red and black pepper
Garlic 2 - 3 teeth

Cooking method

  • Recently I got a cast-iron frying pan with a screw press for chicken tobacco from my mother-in-law. And in search of a recipe, I again turned to Ilya Lazerson.
  • Cut the chicken breast, open the carcass. We remove all unnecessary things. We rinse.
  • Turn it upside down, cover it with cling film and beat it off at the joints. Literally a couple of blows so that the joints do not rise during frying.
  • For the marinade, squeeze the juice of half a lemon, salt and add a little vegetable oil. Rub the chicken with this mixture and leave for at least half an hour. It is possible for the night.
  • Heat the pan well, add a little vegetable oil, put the skin side down on the chicken and fry a little more than medium on fire under pressure until a beautiful golden brown crust is formed. Turn over. Fry the other side. Next, extinguish the fire a little and hold the chicken for another 10 minutes.
  • Prepare the dressing: chop the garlic, add hot and black pepper, a little vegetable oil, water and salt.
  • Soak the chicken with dressing on one side, turn it over and soak it on the other side, press down with a lid, and warm it up for a couple of minutes.
  • The tobacco chicken is ready! Bon Appetit!

A little history of the origin of the name of the dish.

The fact is that this dish has Georgian roots and in the original has the name "Chicken Tapaka". Tapa is a special frying pan where food is cooked. As for meat, this is, roughly speaking, the most common fried chicken. Since we, Russians, are more accustomed to speaking in Russian words, the word “tobacco” has taken root in the name of this dish, which has nothing to do with the plant of the same name.

The chicken is beautiful. I love kuru-tapaka. And I have a similar frying pan, only aluminum, but thick and heavy. At one time, she was taking her from Leningrad. I used it often, and then abandoned it. Recently I took it out, but the chicken shamelessly stuck to it, it didn't stick before. I got upset and threw it back on the mezzanine. I know how to revive cast iron, but not aluminum. No one knows?

I know . I use the method regularly.

I put ordinary salt on the bottom of the frying pan, put it on a very low heat, and so it all stands until the moment when the salt slightly changes color. I turn it off and as it cools a little, I shake out the salt, and wipe the pan with a napkin.

I do the load as follows: I cover the chicken with a large lid, slightly smaller than the pan; I put any suitable bowl upside down on the lid, and on it I put a jar or pot of water.
