Ingredients

For 500 g:
Milk 3.2% 85 g
Kefir 3.2% 85 g
Honey 1 tbsp. l.
Fine salt 1 tsp
Wheat flour, premium 180 g
Wheat flour 1 grade 100 g
Wheat bran 1 tbsp. l.
Mustard oil or
other vegetable 2 tbsp. l. (25 g)
Pressed yeast 5 g
or dry 1 tsp

Cooking method

  • For several years, I changed it for myself. I dilute kefir so that there is no sour taste. I used to use water for this, now I like to dilute it with milk.
  • The bread tastes a little creamy. With a very pleasant aftertaste. Neither sweet nor salty, closer to neutral. Suitable for sandwiches with sweet or savory toppings.
  • Cooking.
  • Activate yeast. (I bake only with compressed yeast. Pour dry yeast directly onto flour.)
  • To do this, mix milk, pressed yeast, honey and 3 tbsp. l. flour (from the norm). Let stand 15-20 minutes. Then pour into the bucket of the bread machine.
  • Add all remaining ingredients.
  • Bake on the Basic or French program, medium crust. (Since I make 2 breads at the same time, I choose 1000g in my bread maker) On the French program, the loaf is taller and has a crisper crust.
  • Process in photographs.

The liquid is given in g, because recently, for greater accuracy, I measure it on a scale, and not in a glass in milliliters.

The ratio of kefir and milk (water) can be changed. Sometimes I bake at a ratio of 2: 1. But then the bread will turn out sour.
