Easter cottage cheese with custard and mascarpone

Ingredients

cottage cheese 10% 850 g
mascarpone 250 g
cream 20% 250 ml
sugar 150-200 g
eggs 3 pcs
nuts (I have almonds) 150 g
dried fruits (dried cherries) 200 g
amaretto flavor 2-3 drops
vanillin

Cooking method

  • Rinse dried cherries and let dry. Fill the almonds with hot water, discard them in a colander, then remove the skin and chop with a knife.
  • Wrap the cottage cheese in cheesecloth and hang it in the refrigerator overnight (or put it in a colander under pressure) to remove excess whey. Then we rub the cottage cheese through a fine sieve (I have a sieve for flour).
  • In a saucepan, beat eggs with half sugar, vanilla and add cream. Place the mixture in a saucepan on a saucepan with a little water and cook, stirring constantly until thickened, do not boil. Cool the resulting cream (for speed, the cream was cooled in a bowl of cold water).
  • Whisk the cold mascarpone with the remaining sugar, add to the prepared cream and beat until smooth. Add mashed cottage cheese, almonds, cherries, flavoring and mix everything thoroughly.
  • We line the paste box in two layers with slightly damp gauze (so that the free ends remain rather long), lay out the prepared mass, level it, cover it with the free ends of the gauze. Install a sieve / colander (I have a disc from the harvester with holes) and a plate (for collecting liquid) under the pasochny, put the oppression on top and put it in the refrigerator for 24-48 hours (I have 30).
  • We put the finished Easter on a dish, decorate as desired and serve.

Note

From the specified amount of ingredients of the curd mass, I got about 1 850 gr. The bulk (approximately 1,200) fit into the pasochny, and the rest into an ordinary plastic glass in which holes were made (which safely left for relatives in a neighboring city))))).

This was my first experience in making cottage cheese Easter. Easter turns out to be very tasty, tender, with a slight sour cherry and a pleasant aroma of amaretto. My family and relatives really liked it.
