Venetian Liver (Steba DD1 Eco)

Ingredients

Beef liver 500-600 g
Bulb onions 2 pcs.
Garlic 2 tooth.
Dry white wine 80-100 ml
Parsley 50 g
Butter 2-3 st. l.
Olive oil 1 tbsp. l.
Freshly ground black pepper taste
Salt taste
Cognac 1 tbsp. l.

Cooking method

  • Turn the pressure cooker on to the Frying mode for 30 minutes, since I used a non-stick bowl, then do not forget to pre-grease the surface with a brush and a little oil.
  • Cut the onion into large enough quarter rings.
  • Peel the liver from films and cut into rather long pieces about 1.5 cm wide, dry with a paper towel.
  • As the pressure cooker enters operating mode (the notification signal will work), then put 1 tbsp. l. butter and melt. Put onion and, stirring occasionally, fry until transparent. It took me 5 or 7 minutes - to be honest, I did not notice it.
  • Crush the peeled garlic cloves with a knife, chop and add to the onion, stir and fry for another 2-3 minutes, then salt and pepper.
  • Pour in wine (I had Jerez from Magarach) and let it evaporate. A small note - since my bowl was hot, I preheated the wine a little in the microwave. Evaporated quickly
  • Chop the parsley, put on the onion, stir and fry together for a minute. Put everything on a plate.
  • Meanwhile, our pressure cooker is still preheated in the Fry mode. Put in a pressure cooker 1 tbsp. l. butter and olive oil. Put the liver in one layer in a pressure cooker, season with salt and pepper, fry for about 2 minutes. Turn over, season with salt and pepper and fry for a couple of minutes. My whole liver was fried in 2 times. You don't have to try to do all of it in one go - the liver will just give juice and will be stewed instead of frying.
  • Then I put everything back in the pressure cooker - both the onions and liver from the first batch, closed the lid and turned off the saucepan.
  • It was necessary to add cognac, but I forgot
  • For 10-15 minutes everything stood just like that, waiting for the arrival of the pope.
