Ingredients

Sorrel 1 large bundle
Boiled eggs 2 pcs.
Fresh cucumbers 2 pcs.
Radish 4-6 pcs.
Green onion 1 bundle
Dill 1 bundle
Garlic 1-2 teeth
Sugar 1 tsp
Sour cream when serving

Cooking method

  • Wash sorrel, cut off the stems and boil them in 1.5 liters of water. Strain, discard the stems. Boil the chopped sorrel leaves in the broth for one minute, cool (I usually do this in the evening.). Grate cucumbers and radishes on a coarse grater (or finely chop, as you like, I rub), chop the onion, dill and eggs, press the garlic through a garlic press (or chop in another way). Pour everything with oxalic broth together with sorrel, add sugar, salt; can be sprinkled to taste of hot pepper. Serve with sour cream.

It turns out a sour very, very light first dish that can be eaten in huge plates, since its calorie content is about 12 Kcal. At the same time, it perfectly restores the balance of fluid and salt in the heat. And also contains live vitamins of young greens. And for some reason it doesn't bother!

Of course, you can add whey and kefir, and even cream; you can cut sausages and boiled potatoes ... But it will be a completely different cold soup.
