Ingredients

minced pork brisket 370 gram
pork belly pulp 370 gram
smoked chicken fillet 270 gram
spices I have a mixture of peppers, Provencal herbs, turmeric, nutmeg, paprika taste
Fine sea salt 1 tsp
cognac 2 tbsp. spoons
water 50 grams
ice 50 grams
dill taste

Cooking method

  • Now here on the site "went fashion" for homemade ham. Elena Tim infected everyone. I was no exception. I really wanted to buy Teskiy, but I bought just such a ham maker. I think. which is not worse.

  • And here's my first experiment. Thanks to Lena, the recipe was formed in my head on my own, I repeat the cooking method after her. Therefore, the first ham is dedicated to her.
  • Let's get started.
  • Twisted the fatty part of the pork loin on a fine mesh with a meat grinder and added a bunch of fresh dill. Cut the pulp into small cubes. I put everything in the combine and began to knead with a spatula nozzle. After three minutes of mixing, ice was added. Beat the mass until the meat threads appear. Added all the spices, diced chicken fillet. I mixed it. I added more cold water and salt. I mixed it. I took a baking bag. I put it there, tamping the minced meat, put it in the cylinder and closed it with a lid. I poured water into a saucepan, put a ham maker there, brought the water up to 80 degrees, lowered the heat and cooked for 2 hours. I watched the temperature of the water so that it did not rise higher. This ham maker has the ability to insert the thermometer probe directly into the ham. Therefore, it can be seen that the ham in the middle has heated up to 80 degrees, like water. Then she turned it off. Maybe not right. But the product was ready, as the slicing showed. I put it immediately in cold water for an hour and in the refrigerator for 3 hours (I didn't have enough patience for a longer time). I opened it, drained the excess liquid, took out the ham and sliced ​​it. It is cut very well. Thin. The ham is firm but not dry. Delicious. The smell is amazing.

I bought Santa Maria seasonings in a regular supermarket, quite small (I myself am also from the provinces, only in Russia). :-)
And smoked paprika a couple of times in Spain, or ordered through friends who went there, just like real saffron.
Smoked paprika is also sold on the Internet (but much more expensive). I have not tried to order in online stores.
I didn’t like liquid smoke anyway, and when I watched a story in "habitat" about smoking mixtures and brines instead of normal smoke, I completely refused. 1 ml of "liquid smoke" is equivalent to a dose of carcinogens from 23 cans of sprat, and is half the annual rate for cyclic hydrocarbons.
It is a pity that there are no such studies on paprika. I suspect that there is a fair amount of haze, but the taste is still much better, more natural, or what?
