Doctor's sausage in a ham maker almost according to GOST

Ingredients

Beef 300 g
Pork 600 g
Egg 1 PC.
Ground cardamom 1/2 tsp
Powdered dry garlic 1/2 tsp
Ground white pepper 1/2 tsp
Ice milk 70 ml
Sugar 1/2 tsp
Nitrite salt 20 g

Cooking method

  • Pass the meat three times through the finest grid of a meat grinder, then thoroughly knead the minced meat with all the other ingredients in a blender until it turns into a homogeneous mixture. Fill the ham tightly and chill in the refrigerator for at least two hours. Cook for two hours at a temperature of 75-80about, then refrigerate for a few hours.
