  • Homemade processed cheese in a milk cooker
  • If you have milk with a short shelf life, then pour the milk into a milk cooker (after filling it with water according to the instructions), bring it to a boil and whistle over high heat, reduce heat and simmer for 10 minutes.
  • If the milk is "long-lasting", preliminary boiling is not required.
  • Add cottage cheese to milk, beat with an immersion blender, cover, bring to a boil and whistle, reduce heat and cook for 10 minutes until the whey separates.
  • Homemade processed cheese in a milk cooker
  • Transfer the cottage cheese to a colander covered with several layers of gauze, then tie the gauze, hang up and leave for 2-3 hours to glass all the whey.

  • Put butter in a milk cooker, put on a small fire and melt.
  • Add salt, soda, stir with a spoon.
  • Add cottage cheese, stir with a spoon or beat with a hand blender.
  • Put on fire, cover, bring to a boil and cook for 10 minutes.
  • At the end of cooking, beat again with a blender.
  • Homemade processed cheese in a milk cooker
  • Pour hot cheese into a greased container.

  • Close the lid and cool to room temperature. Then put in the refrigerator for solidification. After the refrigerator, the cheese has a dense spreadable consistency. It is eaten in almost one sitting.)

That is, if the cottage cheese was initially dry and crumbly, then it will turn out hard

Yeah, so I'll just take crumbly and dry, for I want to get harder cheese ...

Ksyu, thanks for the recipe !!!

I cook melted cheese according to a similar recipe, but it is with eggs ...

And yours is without eggs !!!

I'm talking about cheese, if anything ...

I will definitely try !!!
Omela
Kroshik, I saw your cheese and eggs. It also seems to me that in order to be firmer, at the last stage you do not need to blender, but simply mix and form. The structure will then be completely different.
Anna1957
Little fellow, what about the salt? Is it unsalted, as usual? (Remember a discussion of ham). I mean: put half a spoon or a teaspoon?
Omela
Yeah, Anh, unsalted. I asked my husband if we could put more, grit - no need.
Anna1957
I've already put in 1 tsp. Something the butter began to melt. Pouring out the finished product obviously won't work, just put it out.

And if there is sugar and cocoa? What will happen? Or will it fail?
Anna1957
Who knows how to calculate the fat content of the resulting product? Is it stupid to add the fat content and weight of the starting products, weigh the final result and make up the proportion?
Omela

And if there is sugar and cocoa? What will happen?
Olga, I think it will turn out chocolate melted cheese.

Pouring out the finished product obviously won't work, just lay it out.
Anna, in my photo you can see that the consistency is liquid. can be poured.
Yanusya08
Omela, and if I don't have a milk cooker, can I cook it in a cartoon? It looks very appetizing)))
Masinen
Ksyusha, if I have good cottage cheese initially, then I still need the stage with milk and whey?
Or not?

And if there is sugar and cocoa? What will happen? Or will it fail?
Once upon a time, sweet fruit processed cheese curds were sold - unfortunately the recipe was not found, no one seems to indulge in this ...

and if my cottage cheese is initially good, then I still need the stage with milk and whey?
Mash, theoretically, it is possible without milk at all, as here:https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=169266.0... But according to my feelings, with milk, a thicker and denser consistency is obtained at the exit. And I never had punctures. And if just cottage cheese, then several times it was that it did not melt. Try it differently and you will choose the option for yourself.

Yana, then in a water bath. You can create it in the cartoon.

Omelathanks for the cheese!
I was looking for a recipe without using eggs, there are no homemade ones, I'm afraid of purchased raw ones, and I rarely buy quail. Your recipe was perfect! I increased the only salt to one teaspoon, we love it saltier.
Only during the cooking process I did not manage to melt it straight to a stretching state, maybe I should have kept it on fire for a longer time? In your photo, it is straight homogeneous and pours, but I don't have a lot of the wrong consistency. You probably need to try to make more from other cottage cheese, because mine was crumbly, so it may not have melted ...

About the taste - the cheese turned out to be very tender and tasty, similar to "Almetta", it is perfectly spread on bread and is eaten very quickly, especially with your flat cake, yes with hot seagulls. Thank you!

Omela
Nadia, it turned out gorgeous !!! I love!!!!

but I don't have much of the wrong consistency.
And YOU whipped a blender enough time ?? After I boiled it, I also had a loose structure, I thought. which will not work at all. And I went through it with a blender, and it turned into a smooth shiny mass.

Quote: nadka
and is eaten very quickly
exactly .. a very unprofitable option.
nadka
Omela everything is strictly according to the recipe, and the milk cooker blended it three times, it seems like a lot of time. I tend more towards cottage cheese, I need to try a different consistency, as I feel I will practice in its preparation many times
Omela
Well, I showed the cottage cheese. what I had. The structure is pasty.

Quote: nadka
as I feel I will practice its preparation many times
Yes, my husband told me to always do that.
nadka
Here, and mine also constantly orders cakes
Omela
And we are on a lightweight version of cakes - chapatka.

Yes to be stunned finally! Everything, as soon as the money is there, I buy a milk cooker! Ksyun, do you have a two-liter one, if I'm not mistaken?
Just so on fire, already do not breathe! Again a new Wishlist! What is it ?!
Omela

Yes to be stunned finally!
That I, too, was stunned .. I have forgotten sho such wealth (milk cooker) I have.

She, they'll kick me out of the house if I also mention the chapatnitsa
(although the little worm is already starting to itch that this is a very necessary thing)

Now the primary Wishlist is the biovin shredder, otherwise I can't calmly look at your recipes with ham

Want to organize a new Wishlist?
I knew that you won't leave without wishlist in trouble. I urgently turn off the Internet and tick to sleep.
Omela
Nadia, the shredder is needed. And the chapatnitsa is needed.

Although, it is possible without it, tomorrow I will put the recipe in a frying pan of chapatok.

Mirabel
Ksyusha! I want to sprinkle it .. but will a very soft curd go? cream-curd I mean.
And my milk cooker is small, a liter of everything. This will probably need a recipe in half
I’m talking to myself ... I won’t half, I’ll only reduce it a little. I will whisk milk with cottage cheese separately, not in a milk cooker, and then I will put everything in it.
so I'm waiting for the verdict about cottage cheese
Pakat
Heh heh Omela, Ksyu, thanks for the idea, otherwise my water bath is gathering dust ...

Mistletoewill homemade cottage cheese work? I don't use store cottage cheese at all, but homemade if I take a medium-squeezed one so that it breaks well with a blender?
Elena Tim
I understand that if the cottage cheese can be crushed into a homogeneous porridge, then it will do. Or maybe I'm wrong.
And finally the main cheese maker is running about?
Little boy, come out, look people in the eyes!

Omela

Vika, I don't know what kind of cottage cheese you have there. from ours, I would not do. It's very soft, it melts - there will be a slurry.

homemade cottage cheese will do?
Natasha will certainly do.

Eh, I would only be interested in the very Benefits of the peasant dobrazza, I would have navarilaaaaa cheese!
Omela
And what are those Grace that surrendered. Today I bought cottage cheese by weight. as much as 1kg. I’m thinking how to put it in my milk cooker.
Elena Tim
Well, you can afford to experiment, but in order not to be disappointed at the first attempt, I want to do everything like you do. And there it will be seen. I want it to be exactly the consistency of your cheese.
Omela
aaa .. how, it turns out ... well, come on, then look ...a mad dog is not a hook for a hundred miles.
