We use dry fast-acting yeast for baking bread. 1 teaspoon dry for 1 bread in 1 kg.
The last 2 months very often the bread is concave in the middle. And even if the top is convex, it does not reach the top, see 2 (and earlier it was flush with the top, we have had a bread maker for two years). Yes, and he himself is somehow viscous or something ... This happens especially often if the opened bag has stood for several days (I did not find any restrictions on the shelf life when opened on the package).
We tried to activate them as it is written on the forum - in 10 minutes the cap is obtained, but much less than in the photo in that topic. Then, if you use them, the bread turns out to be convex and more porous.
Packaged instant Pakmaya yeast (Turkish for Thunder (aka Magnet). We have been using them for much longer than 2 months.
The manufacturer began to make a marriage or were the storage conditions violated? Yeast batches are different, shelf life with a margin.

In general, it is not clear what to do with this. Throw out all the yeast bags?

If the yeast is activated and it works, then the reason is the amount of liquid (flour / liquid balance, kolobok) and hot weather (the dough has stood still).

And there is no need to strive for the dough to rise to the top of the bucket, from this the dough can only stand and sink when baking. The amount of lift is controlled by the quality of the batch, ingredients and external conditions.

Yesterday they put bread without yeast activation (they opened a new package) - the bread is terrible, today it was cut - it crumbles worse than the cheapest store ...
