Girls, I want to warn you all, do not confuse Ivan tea with goldenrod,
Checkmark, thanks for the warning! This goldenrod (and I didn’t know what it’s called) also strives to get into the fireweed. But even I, a "nerd", can easily distinguish him.

My tea stood for several days in a sealed jar, now I opened it and smelled it. And there such a delicious aroma was formed! But at first he was not.
Galina, Yes Yes! Everything is as written! Wait, by the fall it will open at all. And if it persists in a year, then you yourself will be surprised where that came from.

Great! And it turns out to be very interesting - making tea yourself!
Galya, that's not the right word, how interesting! I make some tea every day. And every day I experience delight. Moreover, at every stage! And when the tea is dried in the oven, you want the smell to be breathed in by those who have not yet made this tea. Then they would have no doubts about whether to make tea or not! They would immediately run into the field for fireweed!

Oksana, Congratulations ! Who seeks will always find !
Only if possible, it is better not to wash it. The bacteria on the leaves are needed for the fermentation process. Fermentation works better with unwashed leaves.

Ludmila, thanks for the support! : friends: I have already prepared tin cans, the tea is already drying up, it smells like dried fruits, the color is brown. Yes, I did not wash the leaves either, medicinal herbs are not washed before drying. The main thing is to collect it in a clean place. Now even some kind of drug has been invented with bacteria that live on the grass, leaves and which the townspeople do not have enough (which of us washed what with the grandmothers in the village? Mistletoe, not much for a day? For the first time, hold it for 10 hours. Granular it ferments faster than leafy one. And just don't warm it up with anything. He will warm up himself first.

And I have already "fried" in the oven. Only someone thread will explain to me why this should not be put under oppression, but the village is necessary? I was by analogy with the village, at first I laid him under the oppression. Then she caught herself.
auntyirisha
I don't know about oppression, I tamped it down with my hand without fanaticism, but I had it finely ground. And I have the second portion poured into jars If only it would work!
Rada-dms
Omela, I bought many different Ivan-teas from different companies, and when I was young I fermented in the oven. Best - medium fermentation, most aromatic! 7 hours is enough.
Rada-dms
Now, if it's interesting, I wrote specifically for one girl, she never answered which one she bought and how the impression was! And I bought three for her as a specialist, so that I myself would choose which one to order in a store known here.

1. Borisoglebskiy, 50 g, the most fermented, the darkest in color, closer to black tea, requires more time of infusion, in appearance and color is very similar to "Soul Tea", my favorite, which I wrote about. But in comparison with him it loses, there is no that bouquet, aroma.
2. Red Streletsky caftan, as it is written on the package, only 25 grams. Not strongly fermented, although they write strongly, the color gives, like green tea, a very fresh taste, very aromatic, the most among the three, the aftertaste is slightly sour, but very tasty, although I am used to stronger fermentation, I will take more. This tea will be especially good in a bouquet with some other herbs.
3. Terrible tea, they write that it is strong, with character. I thought it would be right in the smoke, nothing like that. It turns out a little richer than number 2, but !! it has a simpler, direct aroma with clear fruity notes, sourness is immediately felt and just for me an obsessive taste of some kind of berry, almost viburnum. I did not like it, the most sour, perhaps flavored with something natural!
I would take the first and the second for, if funds permit. I advise you to brew by pouring boiling water over the cup, or in a small hot kettle. Can be in a thermos for 15 minutes. The first tea is suitable for drinking with milk or cream. So, I think, maybe someone will be interested in the forum, but I don’t know where to put it :) And so we will look for "sincere tea", it comes out cheaper and good. And in the summer you have to pick and ferment yourself, I did this already;)

MariS
Mine is already ready - the aroma is already felt. I will wait for that very delicious aroma to come ...

Girls, Mistletoe, just got free! And then the questionsyyy ... Well, I see you've figured it out yourself and you fly away from the smell! So, everything went like clockwork ... 7 hours of fermentation is very good.Congratulations !

Only someone thread will explain to me why this should not be put under oppression, but the village is necessary?
Marina, we put rolls under oppressionwhich twisted by hand... Because they are not very dense mass fit into the container in which we ferment them. So we press down to seal.
A without oppression put on fermentation granulated tea, which was twisted in a meat grinder. There it is enough to lightly press the mass with your hand, and the mass will be packed quite tightly in the container.
Why do you need to compact the mass? So that the anaerobic bacteria involved in the fermentation process can provide it. Anaerobes are bacteria for which air is death! If the mass is not compacted, then they will die. And the fermentation process will be weak or not at all.

I was the same lather the first year, when I twisted it in a mechanical meat grinder. She began to instruct her husband to twist. He said that he had no time for pampering him and bought me an electric meat grinder. It was a pleasure to make tea with her! I twisted 2 kg in 20 minutes, with a rest break for a meat grinder.

Loksa
Lyudmila, My brewed tea is similar to your first weak fermentation, and dry-boiled granules are similar to medium fermentation: don-t_mention: okay, I'll try to pick it tomorrow and you keep it for 12 hours, my "bag" with leaves is similar to yours

The feeling that fermentation was not going well does not leave me ... Even after 3 hours I get an average color. Maybe there were leaves after the rain? Then there were few beneficial bacteria left and this affected the result.
Loksa
Of course after the rain, I washed them. And the topics, I got it mixed up, forgive nothing, I’ll repeat it again, I’m losing my place of residence, and I know where cars don’t drive.

And I went to see how the correct tea turns out and answered here, I write from the tablet, and he draws whatever letters he wants, he is tired of editing, sorry.

Ludmila, I am at a loss: today I smelled in a jar it smells incomprehensibly and weakly compared to the first dried fruit with something. Hopefully it will, but it smells very weak. If the first one wants to sniff and sniff, this one is not. I’m afraid I’ve tricked some of the fermentation. Well, or you still have to wait. It seems to me that I missed the peak of aroma, because I thought at some point to start drying, I had to trust the nose, not the clock

Ira, but it seems to me that the refrigerator is still to blame! How many hours did the fermentation take? 3 hours in a greenhouse + 2 in a room. This is not a lot. I have fireweed for 14 hours, and the smell is getting stronger and stronger. I want to hold it up to a day. I did not make deep fermentation tea this season. I wanted to do it.

Well, thank you ! I'm so glad you enjoyed the process and the tea! Make plenty of tea so that memories last for a long time!

Girls, Ksyusha, now that you have grasped the essence of the process, then make Ivan tea with fermentation for 15-18 hours (who has not done that yet). Strong fermentation will make tea. Surprise even more. Smell and color! I haven't done one since last year. And today I did and I trudge! Just stick to the technology - so that the layer is at least 5 cm. And do not heat the mass.
