Panasonic SD-2501. Wheat bread Summer leavened bread with oatmeal and bran in a bread maker

Ingredients

Fresh pressed yeast 10 gr.
or dry 1.5 tsp.
Wheat flour 1 grade 450 gr.
Oat flakes with bran 50 gr.
Sugar 1.5 tbsp. l.
Salt 1.5 tsp.
Vegetable oil 1.5 tbsp. l.
Carbonated kvass 290-300 ml.

Cooking method

  • I use compressed yeast. Laying food in a bread maker as dry food in water. Pour kvass into a bucket of a bread machine, crush the yeast. I add sugar there. Pour flakes and flour on top, add salt and vegetable oil. I bake according to program 01 for a Panasonic SD-2501 bread machine (main), size L, medium crust color.
  • When using dry yeast, the order of laying products is in accordance with the instructions for the bread maker.

In the summer, there is a sufficient amount of normal kvass in stores. For the recipe, I use the simplest and most affordable products. You can use any flakes. Kvass, flakes and 1 grade of flour give the bread a beautiful color, not at all like pure wheat. The bread smells like kvass and malt, reminiscent of summer, okroshka, greens, nature. The crust turns out to be quite dense and crispy due to the flakes, but at the same time it is not at all hard, just what you need. If you put it in HP in the evening with a delay in time, then in the morning the whole house smells of rural freshness.

I think it is quite possible. You can even try it without mineral water. But whether such a mild aroma and delicate taste will remain, I don't know. It's worth experimenting anyway.

I did not do it with leavened wort. In the experience of others, try 1-2 tbsp. l. or 50-60gr. Experiment with the quantity and add as much as you like. I made with dry red malt, brewed 3 tsp. - it was a bit much.

Great bread! I took dark kvass, and the bread turned out to be so brownish. Very tasty))) I added a little less liquid, the dough came out rather dense and the bread was a little uneven.
