Berry shortbread baskets with butter custard

Ingredients

Butter 180 g
Flour 2.5 tbsp. (400 g)
Eggs 1 egg and 1 yolk
Sour cream 1 tbsp. l
Sugar 2 tbsp. l riding
Salt pinch
Soda + lemon juice 0.5 tsp + 0.5 tsp
For the cream: 250 ml milk, 80 g sugar, 2 yolks, 25 g flour
Cream 33-38% and cream fixer 100 ml

Cooking method

  • The berry season has arrived, and this gives us all the opportunity to enjoy wonderful desserts and cakes with fresh berries and fruits. I suggest preparing crumbly sand tartlets (baskets) with custard and any seasonal berries.
  • The purchase of good tartlet molds coincided with the ripening of strawberries and strawberries. I wanted to make custard baskets with whipped cream.
  • Strawberries with cream, which have long been a culinary classic and a win-win for any table, are our favorite dessert too. And custard on yolks is very beneficial in taste in combination with whipped cream and goes well with crumbly, not very sweet tartlet dough.
  • Such a dough can be made in advance and kept in the refrigerator, baking baskets as needed. Shortbread dough, as you know, keeps well frozen.
  • - First, you need to beat the butter until a fluffy whitish mass, then add an egg, yolk and one tablespoon of sour cream (mayonnaise - for some reason, tastier with it) and beat the mixture again. It's easier to do this in a food processor.
  • - Quench the baking soda with lemon juice or wine vinegar and pour into the mixture.
  • -Mix all loose products and combine them with the prepared mixture quickly, without too much zeal, knead a soft plastic dough and send it to the refrigerator for 30 minutes to ripen.
  • - Form the same balls from the prepared dough and place the dough on the baking dish. For my molds, 60-65 grams are required. dough for 12 cakes. (My forms do not require oiling, so this is up to you.)
  • - Chop the dough well with a fork and bake at 180 gr. to a pleasant golden color. Let the baskets cool before removing them from the molds. The dough is fragile enough !!
  • Cream preparation.
  • - Mix 50 ml of milk well with two yolks, a spoonful of flour and a spoonful of cornstarch. Heat 200 ml of milk with sugar to a boil, reduce heat and pour in the mixture prepared earlier in a thin stream, stirring continuously with a whisk.
  • - Continuing stirring, cook the mixture until thickened (until the first signs of a boil appear). Add vanilla extract if desired. Remove from heat, cover with plastic wrap and leave to cool completely.
  • I advise you to have a saucepan with a non-stick coating and a special whisk with a silicone coating for cooking sauces and creams, so as not to scratch the bottom and sides.
  • - Beat 100 ml of chilled whipping cream (33-38%) with a thickener (without it) until soft waves and gently mix with the cooled custard.
  • - Put the cream in the tartlets and garnish with berries on top. The berries must be washed in advance and dried well.

  • - Optionally, you can decorate the tartlets with powdered sugar (non-melting) and a mint leaf.

Note

For speed, if you don't want to bother whipping cream, you can add a little butter to the lukewarm custard instead and beat.
It turns out quite well with cream with condensed milk and cream.

You put it, as in ordinary molds, leave a place for lifting, as in the photo, then turn it over after baking, the bottom that was the top turns out to be flat, and the new top has a small depression. These molds are still good for sponge dough.

Only in the traditional will the bottom be slightly concave. Both options are beautiful. I made the second option. That is, the bottom was the place that was pierced with a fork.
I would not say that it was from the proposed filling that they softened a lot. But the baskets are not oak, but crumbly, at the same time they do not crumble from the slightest touch when you make the dough on clean yolks.
As I bake it again, I'll show you a cut, but what's there to see, it's not a cake. As soon as I photographed them, I ate them, because I bake and, as needed, stuff them, and eat them right away.
The forms are very interesting, I advise you to buy them, and there are also some for large berry pies. They also put berries in the same macar as me and pour jelly.

So your advice is good, but it works for simple flat-bottomed molds!
