Rabbit baked with apples and zucchini

Ingredients

Rabbit carcass 1 PC. (2.5-3kg.)
Apples 5 pieces. (large)
Zucchini 1 PC. (large)
Carrot 2 pcs
Lard (or rabbit, chicken fat) 200 gr.
Salt
Black pepper 1 tsp
Water 150 ml.
Soy sauce 30 ml.

Cooking method

  • Rub the rabbit carcass with salt and pepper, if possible leave for 3 hours. Peel the apples (I had an unripe White filling), remove the core, cut into large bars. We clean the zucchini, remove the core if necessary, cut it lengthwise to get strips with a thickness of about 1 cm.
  • We clean the carrots, cut into rings. Finely chop the lard (I have rabbit fat), salt it (with the addition of salt, it is better heated). That's all the preparation ...
  • We put the rabbit in the baking sleeve, put the fat on it (we pay special attention to the hind legs and abdomen). Add vegetables in random order to the rabbit. Mix water with soy sauce and pour into a bag. We tie the edges of the bag and put in the oven.

A rabbit for our family is almost a daily dish - thanks to my daddy, who has been growing them for many years So, I cook from a rabbit and cutlets and dumplings and even sausage ... Rabbits, like any other meat, are different: before years - lean, with tender slightly dry meat (good for frying and baking, as well as for a children's menu); after a year - fatty (this year's record is 1.8 kg of fat from 1 rabbit with a total weight of 5 kg) (extremely tasty with classic stewing in sour cream, suitable for minced meat). Keep this in mind when choosing and preparing your rabbit. Juicy vegetables, sour fruits (with an orange, for example, are very tasty) are suitable for a young low-fat rabbit. But for fatty meat, it is good to serve a side dish in the form of cereals (rice for example). In my recipe, as you probably already guessed, the rabbit was young and lean, but, due to the right additions, it turned out to be tender and very juicy. Try it - you can do it too!
