Ingredients

Half rabbit (back) 1 PC
Onion 2 pcs
Garlic 4-5 pcs
Tomato paste 2 tbsp. l.
Rosemary, thyme fresh Taste
Bay leaf dry 2 pcs

Cooking method

  • Hello everyone!
  • Today we have a rabbit for dinner, quinoa porridge (mega dietary), carrots!
  • Rosemary, thyme is better fresh, if not, then add a dry mixture of Provencal herbs.
  • First, the rabbit needs to be fried on 2 sides on a spoonful of olive oil, then put into a roaster. In a frying pan or stewpan where the rabbit was fried, fry 2 onions (finely chopped) and 5 cloves of garlic. Fry all this in a saucepan for 5 minutes. Then they added 2 tbsp. l. tomato paste and add a glass of water. As soon as the water boils, add the herbs (I have fresh ones) and pour all the contents onto our rabbit and put all this in the oven at 180 degrees, cook for at least an hour.

  • As a side dish, I boiled dietary quinoa porridge. I also prepared a favorite carrot for my husband. At two st. l. olive oil, I fried two large onions, cut into cubes, then added a little water and added 6 coarsely grated carrots. Fry for a maximum of 10 minutes, salt, pepper, add chopped or diced parsley (whichever you prefer). At the end, add 2-3 tbsp. l. sour cream and simmer for a couple of minutes.

Natalia, I will say this - really virgin oil is not very good for frying. My mother-in-law brings me butter from Italy. Her friends have trees and equipment and make oil for themselves. It is used for fried and salads. But this is very different from what, for example, I bought in Ukraine. Even the color is different. It is softer, more pleasant and tastes less cloying and bitter. Therefore, of course, choose the one intended for frying. Or use sunflower seeds for frying. I got so used to mine that I even forgot that the store was different.
You brought me straight out of the oil state, I forgot to think about the store! By the way, here in Germany I used to buy sunflower seeds specially for frying. Super great or corny. But I don't like rapeseed ...

Natalia, it is very tasty. There are three types of black, red and white.I only buy white and black and mix them together. In red, the sugar content is much higher. Porridge has a little bitter taste, but this adds piquancy to it. Many, to remove this taste, pour boiling water and then pour the water. But so vitamins go away too. I pour boiling water in the proportion (half a cup of porridge and a cup of water, 1: 2), it costs about five ten minutes and then I set it to cook. It brews quickly until such a circle is formed around each grain, so beautiful! and only when it's cooked, it needs to be salted! It is important. And salt just a little, you can add a little butter for joy. It is not cheap porridge of course, but excellent in quality and taste. I also love bulgur and black long rice. I bought quinoa again yesterday, the white one costs 200 gr, 3 €. Black is more expensive, 3.50 €. Take a white sample. My husband does not eat buckwheat, and I have to get out. And white rice is not allowed for him - the nutritionist aunt does not allow, they get fat from him.

Irina, thanks for the helpful advice and a dietary dish, my husband is a fan of healthy food .. he has been eating oatmeal for breakfast for 25 years, and he forced me to do everything .. and I had a delicious sandwich and coffee, and then almost a year ago I got my pancreas .. nothing at all I didn't even take water ... somehow I had to eat porridge on the sly ... and I got so involved that since that time I eat every day and most importantly it tastes good to me !!! at first just on the water, and recently I got a soy cow and now I cook oat flakes (long boiling) in soy milk.
