Chocolate ice cream with drunk cherry and almond praline (Brand 3812 ice cream maker)

Ingredients

Ice cream:
yolks 3 pcs
milk 200 g
granulated sugar 100 g
corn starch 15 g
chocolate 70% 100 g
cream 33-35% 400 g
Almond praline:
almond 40 g
granulated sugar 100 g
water 50 g
cherry (pitted) 250 g
cognac 30 g
granulated sugar 50 g

Cooking method

  • "Drunken cherry":
  • Wash cherries, dry, remove seeds. Add granulated sugar and cognac. Stir and leave on the table for an hour, then stir again and refrigerate for 48 hours. Stir the berries from time to time.
  • Almond praline:
  • Finely chop the nuts with a knife.
  • Pour water into a small saucepan, add granulated sugar and bring to a boil. Boil the sugar syrup, stirring occasionally, for 10 minutes.
  • Remove from heat, add nuts, stir.
  • Spread the nut mass in a thin layer over foil greased with a couple of drops of vegetable oil.
  • After the mixture has cooled down (at room temperature), chop into crumbs.
  • Ice cream:
  • Chocolate ice cream with drunk cherry and almond praline (Brand 3812 ice cream maker)
  • Beat the yolks with a whisk with sugar and starch until light foam.
  • Bring the milk to a boil.
  • Pour half of the milk into the yolk mass, stirring vigorously.
  • Pour the yolk-milk mass into a saucepan to the remaining milk. Return the mixture to the fire and heat, without boiling, stirring until thickened.
  • Add the pieces of chocolate to the hot custard and stir.
  • Cover the cream with a film so that it touches its surface. Cool down.
  • Beat the cream and mix with the cream.
  • Transfer the mixture to an ice cream maker and freeze. My ice cream was ready in 45 minutes, the paddle stopped completely at -03C.
  • Assembly:
  • Put half of the finished ice cream, berries (after allowing the juice to drain) and praline in a storage container. Add the remaining ice cream and stir.
  • Put ice cream in the refrigerator for one and a half to two hours.
  • Bon Appetit!

Note

Not a single ice cream has disappeared at such a rate. Silky, delicate, moderately chocolate, with crunchy praline pieces and delicious cherry - a real delight!
