  • And now - raspberry tiramisu! Our family loved this chic French dessert.
  • So tiramisu:
  • Raspberry sauce:
  • First, make the sauce. Place 15g of sugar with 50g of water in a saucepan. Stir and put on fire, bring to a boil. Beat 100g raspberries with a blender. Combine with hot syrup, beat again. Pass through a sieve to remove seeds.

  • If you like crunching, then you do not need to pass through a sieve.
  • Cream:
  • Separate the whites from the yolks. Add yolks with 120g sugar and beat with a mixer until white.
  • Open the vanilla pods and brush off the contents, then add to the egg mixture.

  • Add mascarpone three times, mixing in a mixer to "ventilate" it.
  • The more we beat, the more the mascarpone is aired and takes on a light and unmatched consistency.

  • Add the icing sugar and beat.
  • Add proteins to vanilla mascarpone.

  • Keep in the refrigerator for at least 3 hours before you start eating it!

What a pity that I have never seen Savoyardi on sale. It even so happened that I don't even know about it: biscuit? shortbread? puff? ... I found this variation from a French chef. I liked it more than the Italian classic! Wrote that French cuisine. But very tasty, really! And the second time I whipped the mascarpone longer and of course it was more magnificent and softer!
