Ingredients

Flowers of fireweed (ivan-tea) 200 gr (2 - 3 glasses)
Granulated sugar 2 Kg
Water 1 l
Citric acid (or juice of 1 lemon) 1 tsp

Cooking method

  • The recipes of our girls inspired me to make this "honey" - Linden honey madam.stv1, Mint jam MariV and Dandelion honey Crumbs.
  • Since I make fermented willow tea every summer, when collecting fireweed leaves, I also collect flowers.

  • I dry them and then add them to ivan tea when brewing.

  • After getting acquainted with the recipes for "honey" from mint, dandelions and linden flowers, I "fired up" to prepare a similar "honey" from fireweed flowers.
  • So:
  • 1. Collecting fireweed flowers (ivan-tea)

  • 2. Put them in an enamel pan and fill with cold water
  • Fireweed honey
  • 3. Bring to a boil and simmer for 10 minutes.
  • 4. Turn off the heat and leave the broth with flowers for several hours (5 - 10).
  • 5. Strain the broth, squeeze the flowers

  • The broth turns out to be dark purple in color and bitter in taste

  • 6. Pour sugar into a bowl for cooking jam, pour the broth

  • 7. Put on low heat, bring to a boil, stirring constantly. The color is not beautiful yet, dirty lilac

  • 8. Boil for 20 minutes, constantly skimming off the foam

  • 9. Check the readiness of the "honey" by pouring a little on a plate. Let it cool. If the "honey" is still liquid, then we continue to boil it. If the consistency of "honey" suits, then pour citric acid into it (or pour the juice of one lemon). The color of "honey" immediately becomes a very beautiful red-crimson color

  • 10. Boil for another 3 - 4 minutes. Pour the finished "honey" into sterilized jars, roll up the lids. "Honey" is ready. Look how handsome he is!

You know, I would compare this "honey" with beautiful clothes. There are home clothes, sometimes - everyday, sometimes - on the way out. And there is one that is admired on the catwalks - they look, admire, but few people wear it. "Honey" from Ivan-tea flowers looks unrealistically beautiful! The photo does not convey true color depth. If you pour "honey" into a beautiful jar and put it on an open kitchen shelf, then daily aesthetic pleasure is guaranteed! I did so. I have one jar in the most conspicuous place. Of all the objects in the kitchen, the eye stops at her. The soul immediately becomes very warm! I think that on gray autumn and winter days - this is what you need! Until the fireweed has faded, prepare at least half a portion of this beautiful and healthy "honey".

I made such honey as soon as you wrote about it in the topic about tea! Only proportions "by eye" (from what was) - 1.5 cups of fireweed flowers (from the freezer, lay there, waiting for me to dry them), 1 liter of water (boiled for 20-30 minutes), 1.5 kg of sugar, 1 h. l. citric acid.
When I began to "boil" the flowers, I was upset - the broth turned out to be some kind of dirty green-gray color (and you have such a beautiful raspberry honey in your picture), but I decided to see it through to the end - I will always have time to throw it out). I cooked a little over low heat and the color began to change, somehow brown, then I filtered the broth, added sugar (cooked stirring for about 40 minutes) and added lemon. acid (not just a whole spoonful, but slightly "adding" and stirring, otherwise in the topic about "Linden honey" they wrote that if you add a spoon right away, the honey will boil and can run over the edge) And I did it!
Transparent honey, raspberry! The taste is delicate, honey with the smell of fireweed! And without bitterness - this is probably because I did not make the broth for a long time. In terms of density - like liquid honey. I liked it very much!

About the broth - I was afraid to boil and insist for a long time, because I tried it and it seemed that it was bitter, but in infusions, usually, bitterness intensifies - so I did it, as in the Linden honey recipe - I was reinsured) But in general - I have honey without bitterness I liked it, and the smell is very delicate, but immediately recognizable! (for those who know the smell of Ivan-tea)))

You can boil the "honey" again by adding a couple of tablespoons of water to it, maybe a little more - you need to look at the consistency. And you can also add a little lemon. You can try adding water directly to the jar, stirring it and putting it in the microwave for heating. Just be careful in this case - so that "honey" does not escape from it.
I deliberately went to look at all my "honey" - it is in the same form in which I rolled it up.
