Ingredients

Dough:
dry yeast (saf-moment) 7g (2 tsp)
wheat flour c. from 395 g
milk 241 g
salt 7 g (1.25 tsp)
sugar 42 g
butter 57 g
lemon zest 1 tsp
Filling:
butter 40 g
sugar 80 g
ground cinnamon 10 g
walnuts 70 g
raisins 80 g
Glaze:
cottage cheese 70 g
powdered sugar 55 g
butter 30 g
vanilla extract 0.5 tsp
lemon or orange extract a few drops

Cooking method

  • Dough:
  • Mix yeast with 350 grams of flour, add salt, sugar, milk at room temperature. Add softened butter and the remaining flour 7-8 minutes after starting the kneading. Knead a soft, non-sticky dough.
  • Transfer the dough to a clean, lightly oiled bowl (the dough will double in size during proving). Close the bowl with a lid or tighten with cling film. Refrigerate for 12 hours.
  • Remove the dough from the refrigerator and let it warm at room temperature for 2 hours.
  • Filling:
  • Melt and cool the butter for the filling. Mix sugar with cinnamon. Finely chop the nuts with a knife. Pour raisins with boiling water and leave for 10-15 minutes, then put them on a sieve.
  • Dust the table with flour. Lay out the dough, knead and roll into a layer 30x40 cm. Grease with melted butter, sprinkle with a mixture of sugar and cinnamon, nuts and raisins. Roll up on the short side. Lay with the seam down and cut with a sharp knife into washers 2.5-3 cm thick.
  • Transfer the dough pieces to a mold lined with baking paper. Proofing under a foil for 1-1.5 hours.
  • Bake in an oven preheated to 200 C (convection 180 C) degrees for the first 7-8 minutes, then lower the temperature to 180 C (convection 160 C) degrees and bring the rolls to readiness.
  • For the glaze, mix melted and chilled butter, curd cheese (I had almette), powdered sugar and extracts (did not add). Apply glaze to hot rolls.
