Cooking method

  • I am sure that many bakers make mashed potatoes and jam in the microwave. But the search for such a method at Mcooker gave practically no results. Last year, when an unprecedented apple harvest was born in my garden, I was puzzled by the problem of where to attach it. The apples were dried, jam and compotes were cooked, but I also wanted to make marmalade and marshmallow out of them. Moreover, without any agar-agars and zhelfix. I didn't like the idea of ​​standing by the pan, constantly stirring the mashed potatoes and jam. But the mention of our bakers that they make jam in the microwave inspired me to this experience. It turned out to be so easy! And most importantly - without the use of any additional technique such as an oven, blender and wiping the mass through a sieve. Without spitting hot mashed potatoes and sticking them to the pan. And the density of such jam or mashed potatoes can only be surprised. It is very easy to prepare marmalade and marshmallow from such mashed potatoes.
  • So this recipe I present for those who are still in search of the perfect way to make mashed potatoes and jam. You can cook it from almost anything - from apples, pumpkins, carrots, plums, pears ... For those who are afraid of microwaves, this method, of course, will not work. I decided for myself a long time ago on this score. Therefore, this method is ideal for me (at least at this stage of life).
  • So, I am showing the preparation of mashed potatoes and jam on the example of apples.
  • 1. I collected the carrion

  • 2. Peeled the apples and cut them into random pieces into microwave-safe dishes (I have a large salad bowl). The salad bowl fits 800 grams of chopped apples. I do not recommend doing more than 1.5 kg.

  • 3. I put it in the microwave and turned it on for 10 minutes at maximum power (I have 850 W).
  • 4. After turning off the oven, stir the mass with a spoon, simultaneously kneading pieces of apples with it. Apples are kneaded with stirring very easily.
  • I turn on the microwave 3 - 4 more times (each time for 7 - 8 minutes). After each shutdown, I mix the mass. The photo shows how the mass gradually decreases in volume and becomes more homogeneous.

  • 5. After 30 minutes, I reduced the power by half (I have 400 W), added sugar. She turned on the microwave twice more for 8 minutes. After turning off the oven, she stirred the mass with a spoon. She became completely uniform.

I put the finished jam in a jar sterilized in the same microwave (5 minutes at maximum power with half filled with water), rolled up the lid, turned the jar over and left it in this position for 30 minutes. not left because of its density under the lid. Everything, the jam is ready. If you do not add sugar, then we get mashed potatoes. Look at the light color of the jam! And how thick it is! It does not spread in baked goods. And such jam or mashed potatoes are stored perfectly!

1. From 800 gr. peeled apples and ¾ glass of sugar made 0.5 l of jam. From 1.5 kg of apples, respectively, 1 liter is obtained. Of course, not much. But cooking puree / jam in the microwave does not take much time. It is being prepared as if in passing - the microwave turned off, took it out, mixed it and went on about my business.If I miss the moment of turning off the stove, nothing terrible will happen - nothing will burn, nothing will splash out. Thus, last year, as if by the way, I prepared about 30 liters of jam and mashed potatoes - a jar every day and did not noticeably receive such an amount for myself. Most of it went into making marmalade and pastille. And the mashed potatoes went well in cereals and pastries.
2. The cooking time for puree and jam differs depending on the variety and type of fruits and vegetables. Hard varieties cook faster than more juicy ones. Therefore, it is preferable to choose hard varieties. It takes longer to cook from plums and pears than from apples, carrots and pumpkin. As the amount of fruits (vegetables) increases, the cooking time also increases.
3. After cooling, the puree / jam becomes much thicker than hot. I harvest them in varying degrees of density. And on the jars I glue the inscription about what this puree or jam is intended for - in marmalade, marshmallow, gingerbread, ordinary pastries, in porridge ...
4. Precautions.
You need to carefully remove the dishes from the microwave. First, it's hot. You need to do this with potholders. Secondly, the microwave plate can stick to the container in which our jam is being prepared. It happened once to me. When I took out the saucepan from the microwave, the plate fell and broke. I had to buy a new one. Therefore, taking out the dishes from the microwave, you need to make sure that we do not take out the plate with it.

From 1.5 kg of apples, the time increases by 1.5 times. And from more juicy fruits and vegetables, you will also have to cook longer. Nothing will burn, don't worry. I haven't tried tomatoes. I came up with another method for myself - it turns out faster than the standard method. Anticipating the question, I will immediately answer. I twist the tomatoes in a meat grinder (I have an electric one, so it turns out quickly). In a saucepan I bring to a boil, turn off the heat and let stand for an hour. Then I pour in a full sieve of this mass, leave the mass for 7 - 8 minutes directly in the sieve (I have a wire sieve, two-layer, not a single seed passes through it). All excess fluid drains off during this time. I usually pour it out, as it is very light, almost like water. Then I rub the mass through a sieve with a potato pusher (metal - at the end of the handle there is a platform with holes) - in the same movements as pounding potatoes. It turns out quickly and easily. So 3 - 4 passes and we get a thick mass without skins and seeds. Then I use it in this form or boil it to the desired density (it boils down quickly). It is also possible in the microwave, so as not to guard the tomato from burning and splashing.
