So from the beginning it did not work out for me: the bread turned out to be sticky, dull. Made according to recipes from a book. I tried recipe 4, the defect is identical. And then I tried the recipes from this forum and it turned out great! Both wheat and whole grain came out well, the crumb is elastic, no stickiness. I haven't changed the flour, it's the same.
Apparently my own recipe book is lying. Perhaps there is a lot of liquid in their recipes.
