Melted butter

Ingredients

Butter 82.5% 900 gram

Cooking method

  • 1. Buy 5 packs of 82.5% butter, 180 grams = 900 grams. You can buy more, then the cooking time is doubled. I think our sous will fit 3-4 kg.
  • Buy butter only of the highest grade, the higher the fat content, the higher the yield of ghee.
  • 2. Cut the butter, turn on the temperature 83 C. I have met recommendations on the Internet for a temperature of 80-85 C. Stick to these values for your taste.
  • Melted butter
  • 3. Put the butter in a sous vide bowl, the bowl is non-stick and at this temperature nothing will burn, then everything is washed off easily.
  • 4. Walk for about 30 minutes. After 30 minutes, the butter will melt and foam will appear, remove with a strainer. The foam is very tasty, do not throw it away, you can put it in porridge. At this stage, our oil is still cloudy. Do not stir anything.
  • Melted butter
  • 5. After about another 30 minutes, you will see the bottom with a white sediment, this is milk protein and the liquid will become transparent and golden. Our butter is completely separated into fractions: fat and milk protein. We turn off our device.
  • Melted butter
  • 6. You can carefully drain the fat into the container using a ladle by tilting the sous vide bowl. Wait for the protein to settle to the bottom.
  • Melted butter
  • Use cheesecloth or finest strainer before pouring into containers. Try to keep the milk protein from getting into the butter and ladle. A couple of drops are not scary, for the first time, it will fall to the bottom.
  • 7. The remainder, which cannot be poured without catching the milk protein, just pour it into a cup and when it freezes, there will be frozen butter on top, milk protein below. Divide, the milk protein is usually thrown away, the butter is retained. In some national cuisines, milk protein is also used, but I poured it out, there is only 100 ml left. draft.
  • 8. The oil should harden, according to Wikipedia, the oil is stored without a refrigerator for 9 months and does not lose its properties and for 1 year and 3 months in the refrigerator.
  • 9. Before storage, heat the oil to 125 C in a saucepan. And only then pour into storage containers. If the oil is not ignited, the oil may disappear.
  • They are used in various dishes: cereals, greased pancakes, fried potatoes. Used for cooking seafood: mussels, shrimps, etc.

Time for preparing:

1 hour

Cooking program:

83 C

Note

When preparing, I used two sources:
1. Famous culinary blogger 🔗
Took the temperature regime
2. And a step-by-step recipe for a regular saucepan to determine the stage of cooking 🔗

1 kg of butter = 1 hour of cooking
2 kg of butter = 2 hours of cooking, etc. the time is doubled
3 kg of butter = 3 hours, etc.

Vaneska
Penka, thanks for the experiment, did not dare to portray it in sous form, only in a water bath and with a thermometer at 85 degrees. One small but important addition: ready-made butter is a must !! boil until hazy, otherwise it will quickly deteriorate (there was an experience), but everything is fine
Foam
Vaneska, Thanks for the addition, I went to ignite.) It's not too late.

Dusja
Also, put a slice of peeled raw carrots in the jar before closing. When stored, carrots will give the oil a pleasant "creamy" flavor!
Foam
Dusja, I think, carrots are already superfluous)) As in that saying: The best enemy is the enemy of the good. (C) I had good butter, after overheating it, and so the flavor .. take a bowl and drink until the liver falls off))
Vinokurova
Foam, I correctly understood that 800 grams of ghee is obtained from 900 grams of butter?
Foam
Vinokurova,
What kind of oil (fat) yield you get can be easily calculated.
Butter 82.5% 900 grams of butter * 82.5 / 100 = 742.5 grams of ghee
Butter 72% 900 grams of butter * 72/100 = 648 grams of ghee
The rest is milk protein

that 900 grams of butter makes 800 grams of ghee?
AlenKa, nope, it won't work.
For how many years I have been making ghee, there has never been such a solution.
And now the oil is generally not alright.
The yield depends on the quality of the oil.
zhenya_s
girls, explain to me, I am ignorant, but why drown oil?
Anatolyevna
zhenya_sThe oil tastes better and is better stored. I like it so much!

Even a simple egg becomes different taste)
Calories almost the same as vegetable oils = 892 calories
Refined Vegetable = 899 Calories

umm ... I'm really interested!
Foam
zhenya_s, on the Internet look for articles Indian cuisine and ghee (ghee) oil, they still use it in medicine. In their hot climates, this is the only way to preserve butter in this unique way.
My grandmother often did it too, only I was small and clapped my ears and it was not interesting to me. I still remember the taste of potatoes in ghee, in a cast-iron skillet.
In winter, for some reason, ghee becomes warm, eat something cooked on it and warmth spreads through the body, maybe it's just my feelings)) But I love it only in winter, I prefer vegetable in summer.
zhenya_s
uhhh where is my big spoon))))
so you can not store in the refrigerator, right?
Foam
zhenya_s, you can See point 8)
